White Bean Soup with Vegetables: Delicious, nutritious, easy to prepare – with the cozy taste of grandma’s kitchen.

WHITE BEAN SOUP Ingredients:

– 500g canned white beans

– 1.5 L of boiling water

– olive oil to taste

– 2 cloves garlic, roughly chopped

– 1 unit of onion, roughly chopped

– 2 units of celery of about 5 cm, cut into slices. (optional)

– salt to taste

– pepper to taste

Carrot ingredients:

– 1 carrot(s), peeled, diced

– salt to taste

Ingredients Pasta for soup (optional)

– 100 g of penne – optional (or whatever you prefer)

– salt to taste

Ingredients to finish

– chopped parsley to taste

PREPARATION:

  1. Bring 1 pot of water to the boil to cook the carrots.
  2. Start by cooking the carrot cubes (see preparation).
  3. Set aside the other ingredients and utensils for the recipe.
  4. Put a small pot of water on to boil to cook the soup and adjust the consistency at the end of the recipe.
  5. If you use canned beans, place them in a colander and wash them under running water to eliminate any residue, divide them into 2 parts, â…” to make the basic broth (see preparation) and the other part to add together with the vegetables.
  6. Wash and peel the garlic clove and the onion and chop them coarsely.
  7. Wash the celery stalk (optional) and cut it into slices.
  8. Wash and dry the parsley (optional) from the finish, chop it and store it on absorbent paper.

PREPARATION:

Carrots – Cooking (do this step before continuing pre-preparation):

  1. Wash, peel the carrot and cut it into cubes proportional to the size of the white beans.
  2. When the water boils, salt it and add the carrot cubes.
  3. Cook until al dente, about 8 minutes.
  4. Continue pre-preparation (point 3).

Carrot and White Bean Broth Base:

  1. Drain the carrot as soon as it is cooked, place it in a colander and rinse it under running water to cool it and stop the cooking. Set aside in a bowl or on a plate.
  2. In another pan, sauté the onion, minced garlic clove, and celery (optional) in olive oil over medium heat until the onion is translucent.
  3. Add ⅔ of the reserved amount of white beans, season with salt and sauté for 1 to 2 minutes.
  4. Add the boiling water (see quantity in ingredients), lower the heat to medium and cook for 10 minutes.

Dough (optional):

  1. While the bean broth is cooking, add the water to the pan where you cooked the carrots again to cook the pasta.
  2. When the water boils, add salt and add the pasta (optional).
  3. Cook 2 minutes less than package instructions.
  4. Once cooked, drain them and place them in a bowl of water, preferably iced, to stop the cooking.

Basic white bean broth:

  1. Place the basic white bean broth in the blender and blend until you obtain a smooth, homogeneous cream.
  2. Return to the pan.

White Bean Soup with Vegetables:

  1. When ready to serve, return the pan with the white bean broth to the heat and bring to a boil.
  2. Add the remaining white beans, cooked carrot cubes and drained pasta (optional).
  3. Return to the boil and adjust the seasoning.
  4. Lower the heat and cook for a few more minutes to blend the flavors and adjust the consistency of the soup, according to your preferences – if necessary add a little more boiling water.
  5. Turn off the fire.

FINALIZATION AND ASSEMBLY:

  1. Download the white bean soup for a soup tureen or, if you prefer, distribute it in deep plates.
  2. Garnish with chopped parsley (optional).
