Ingredients:

  • 3 cups (tea) of wheat flour
  • 1 cup margarine (tea)
  • 2 tablespoons of milk
  • Salt to taste
  • 1 egg
  • 1 egg yolk for brushing

Filling

  • 1/2 cup (tea) olive oil
  • 2 cloves garlic, minced
  • 1 chopped onion
  • 1 chopped tomato
  • 2 courgettes, grated with the skin
  • Salt and black pepper to taste
  • 1 tablespoon chopped parsley
  • 1/2 cup chopped olives
  • 3 eggs
  • 1 can of cream

Preparation method:

  1. In a bowl, mix the dough ingredients until it no longer sticks to your hands.
  2. In a pan add the olive oil, garlic, onion and fry for 5 minutes.
  3. Add the tomato, courgettes, salt, pepper, parsley, olives and sauté for 10 minutes, stirring occasionally.
  4. Remove from heat and add the remaining mixed ingredients.
  5. Use the mixture to line some tart molds, keeping some of the mixture aside for the topping.
  6. Add the filling, cover with the remaining dough and brush with egg yolk.
  7. Bake in the preheated oven for 30 minutes or until lightly golden.
  8. Unmold and serve.
