A gluten-free pizza dough, very quick to make, with a very tasty escarole and anchovy filling

Sautéed Escarole Ingredients

– 1 bunch(s) of endive, cut into strips

– salt to taste

– 4 tablespoons of olive oil

– 2 cloves garlic, minced

Low Carb Pizza Ingredients – Dough

– 2 units of eggs

– 2 tablespoons melted unsalted butter

– 2 tablespoons of fresh cream

– 120 g of almond flour

– 2 tablespoons golden flax seeds

– 2 tablespoons of oat bran

– 2 tablespoons grated parmesan cheese

– 1 teaspoon(s) of salt

– 1 tablespoon(s) of baking powder

– baking paper as desired

Seasoned Tomatoes Ingredients

– 1/2 can of diced peeled tomatoes (with juice)

– 1 tablespoon(s) of olive oil

– 1/2 clove of garlic, minced

– salt to taste

– dried oregano to taste

Ingredients to finish

– 200 g of grated mozzarella

– 4 pieces of canned anchovy fillets

– dried oregano to taste

– extra virgin olive oil to taste

PREPARATION:

  1. Separate the recipe ingredients and utensils.
  2. Wash the escarole, dry it and cut it into thin strips.
  3. Peel and chop the garlic.
  4. If you haven’t purchased already grated mozzarella, grate it.
  5. Preheat the oven to 200°C.
  6. Place the anchovies in a colander and rinse under running water to remove excess salt.

PREPARATION:

Braised Escarole:

  1. Place the endive in a pan, add a little salt and, over medium heat, stir until it wilts.
  2. Remove from the pan, place in a colander and let drain.
  3. In the same pan, over low heat to prevent burning, add the olive oil and sauté the garlic for 1 minute or until golden.
  4. Turn off the heat and reserve the garlic in the pan.

Low Carb Pizza – Dough:

  1. In a bowl, mix all the ingredients, one by one, following the order in which they are described in the ingredient list.
  2. The result will be a soft dough.
  3. Preferably prepare individual pizzas. Divide the dough into equal portions (1 per person).
  4. Place a piece of baking paper on a baking tray, grease it with a drizzle of oil and roll out a portion of dough, forming a circle.
  5. Microwave on high for 2 minutes to pre-cook.
  6. After this time, check if it is already firm, otherwise leave it to rest for another minute (the pre-cooking time depends on the power of the microwave).
  7. Carefully remove the baking paper and transfer the pastry disc to a non-stick baking tray.
  8. If you are making individual pizzas, repeat the process with the other portions of dough.

Seasoned Tomatoes:

  1. In a bowl, mix the diced tomatoes with the juice, olive oil, minced garlic, salt and oregano. Book.

Braised Escarole:

  1. Return the pan with the garlic to the heat to heat it.
  2. Remove the endive from the sieve and press it between your hands until all the liquid comes out.
  3. Put it in the pan with the garlic and mix.
  4. Adjust the salt and turn off the heat.

Low Carb Scarola Pizza with Anchovies:

  1. Divide the seasoned tomato over the pre-cooked pasta discs.
  2. Spread the sautéed endive over the tomato.
  3. Spread the grated mozzarella over the endive.
  4. Place the pizza(s) in a preheated oven at 200°C for 10-15 minutes or until the edges are golden and the mozzarella is melted and lightly browned.
  5. Once the estimated cooking time has elapsed, check if they are ready, if so, turn off and remove the pizza(s) from the oven.

FINALIZATION AND ASSEMBLY:

1. Download low carb escarole pizza(s) for individual dishes or cut into pieces for serving.

2. Tidy up the alich regarding pizzas.

3. Sprinkle with oregano and drizzle with extra virgin olive oil.
