Ingredients:
- 2 tablespoons breadcrumbs
- 2 tablespoons of wheat flour
- 1/2 cup chopped green chili pepper
- 1 egg
- Salt and black pepper to taste
- 4 tablespoons of oil
Sauce
- 2 tablespoons butter
- 1/2 grated onion
- 1/2 cup sliced mushrooms
- 1 cube of meat broth
- 1 cup of water (tea)
- 1/3 cup Madeira wine
- 1 teaspoon cornstarch
Preparation method:
- In a bowl, mix the meat, breadcrumbs and wheat flour, chives, egg, salt and pepper until a smooth mixture forms.
- Divide it into 6 parts and form 6 medallions.
- Wrap in cling film and place in the freezer for 1 hour.
- For the sauce, heat a pan with the butter and fry the onion and mushrooms for 2 minutes.
- Add the beef broth and water and cook over low heat for 5 minutes.
- Add the wine with the dissolved cornstarch and cook until it thickens.
- Turn off and set aside.
- Heat a pan with oil and fry the medallions until golden on both sides.
- Remove from the oven, arrange on a serving plate and serve with the sauce.
