Ingredients:
- 8 tablespoons hydrated tapioca starch
Filling
- 150 g of grated light mozzarella
- 100 g cherry tomatoes cut in half
- Oregano and fresh basil to taste
Preparation method:
- Sieve the tapioca starch and spread it in a large non-stick pan, pressing lightly with a spoon.
- Place on low heat and when it is firm, turn the dough over to firm it up on the other side.
- Remove from the pan and cut small circles with a cutter.
- Spread the mozzarella, cherry tomatoes, oregano and basil over the tapioca paste and return to the pan for another minute, to melt the cheese.
- Transfer to a plate and serve immediately.
