Raw cassava cake with coconut

Ingredients:

  • 3 cups grated raw cassava
  • 2 cups milk (tea)
  • 1 glass of coconut milk (200 ml)
  • 4 eggs
  • 3 tablespoons butter
  • 1 cup and 1/2 cup (tea) wheat flour
  • 1 and 1/2 cups coarsely shredded coconut
  • 1 tablespoon of chemical yeast
  • Margarine for greasing
  • Sugar for dusting

Preparation method:

  1. Blend the cassava, sugar, milk, coconut milk, eggs and butter in a blender until smooth.
  2. Pour into a bowl, add the flour, grated coconut and yeast and mix with a spoon.
  3. Pour into a greased and sugar-sprinkled 22cm x 30cm baking dish and bake in a preheated medium oven for 40 minutes or until golden brown. Let it cool and serve.
