5 highly appreciated dishes of Minas Gerais cuisine on TasteAtlas:

Cheese Bread

One of the most popular accounts of the origin of cheese bread is that the recipe was created in Minas Gerais, in the 18th century, when peasant cooks used starch instead of wheat flour in their bread recipes.

Along with cassava starch, the remaining cheeses were mixed and hardened. At that time, the delicacy was enjoyed before or after meals.

This soft and tasty bread is now consumed throughout the country for breakfast or as a snack. In addition to being easily prepared at home, cheese bread is sold in cafes, snack bars and bakeries.

Tropeiro Beans

Tropeiro beans are a traditional dish from Minas Gerais. A favorite dish of herders in the colonial period. It is prepared with beans cooked with salted or dried meat, cassava flour and various seasonings, herbs and vegetables.

Today there are countless variations of the dish and the type of beans and meat can vary in each region of the country.

Canasta

Canastra is a Brazilian cheese made from raw cow’s milk. It originates from the Serra da Canastra area, in Minas Gerais. The cylindrical cheese is slightly softer and its flavor is slightly acidic and spicy.

Traditionally Canastra matures for 21 days, but some producers let it mature for even longer, up to 40 days, when its flavour resembles that of Grana Padano.

It is recommended to pair the cheese with red wine, dark beer and guava paste. In 2008, this cheese was declared an intangible cultural heritage of Brazil.

Minas Cheese

Artisanal cheese is made from raw cow’s milk, characterized by its soft, spongy and moist texture. The flavor of Minas cheese is delicate and slightly salty, depending on its maturation and the region of production.

Bean Tutu

The traditional Brazilian dish, originating from the Minas Gerais region, is made with a combination of black bean puree and cassava flour used as a thickener. Onion, garlic, olive oil, parsley and bay leaves are added for seasoning.
