Michelin stars are the dream of many chefs and restaurants around the world. A true testament to quality, refinement and a unique experience, each star represents another step towards the restaurant’s consolidation on the international gastronomic scene. But who thinks that Bibendum, the famous Michelin man, lives only on stars?
Inspectors work year-round tasting and experimenting with the best of world cuisine, but some establishments, despite their distinction, do not fall into the star category. For restaurants and bars that offer high quality at more affordable prices, the Bib Gourmand seal has existed since 1997.
With prices that vary from country to country, Bib Gourmand restaurants have a common style of cooking, with simpler dishes that, at times, could even be reproduced at home. In São Paulo, Rodrigo Oliveira’s restaurants, Balaio IMS and Mocotó, Morena Leite’s, Capim Santo, Helena Rizzo’s, Manioca, Felipe Schaedler’s, Banzeiro, and chef Manuelle Ferraz’s, A Baianeira, are some examples of Brazilian Bib Gourmands.
This seal is a source of pride for chefs, as Helena Rizzo recognizes when talking about the importance of an award like Michelin, whose criteria are rigorous and serious evaluations. Morena Leite, for her part, is proud of having always managed to have Michelin as a personal reference, “Capim Santo combines high-quality gastronomy, affordable prices and a pleasant atmosphere, being among the restaurants awarded in the Bib Gourmand category of the Guide is an honor.”
Chef Felipe Schaedler goes back to the origins of his restaurant to say that the award is very important to them, as it highlights a cuisine that represents the Amazon region in the Michelin Guide. “Through the guide we receive several tourists from other countries who are very curious about our flavors,” he says.
For chef Rodrigo Oliveira, this recognition also has great value, since “it is the award that best illustrates what we continually try to do, which is to combine excellence with inclusion, creating an accessible environment not only in terms of costs, but also in terms of language. Bib Gourmand has a special meaning, because it is not about making you feel exclusive, but about making you feel part of the history of this restaurant. Maybe, for us, it is worth more than a star.”
