Ingredients for the crepe snack:

– 2 tablespoons tapioca starch (or sweet cassava starch)

– 2 units of eggs

– 40 g of parmesan cheese

– salt to taste

– pepper to taste

– dried herbs to taste (oregano or rosemary) (optional)

PREPARATION:
  1. For a recipe for 2 portions use a 20 cm pan.
  2. Separate all the ingredients and necessary utensils.
  3. Preheat the Airfryer to 200°C for about 5 minutes while you prepare the crepes.
PREPARATION:

Crepioca:

  1. Place the eggs in a bowl and beat to combine the egg whites and yolks.
  2. Add the tapioca or sweet cassava starch and grated cheese and mix.
  3. Add salt if necessary: ​​it depends on the type of cheese you use.
  4. Season with black pepper and dried herbs of your choice (optional) – tip: try different seasonings to vary the flavor of the snacks.
  5. Mix well until a smooth dough forms.
  6. Grease a non-stick pan with a drizzle of oil, using absorbent paper to remove the excess.
  7. Place over medium heat to warm.
  8. Pour all the dough into the pan and roll it out into a large disk, similar to a pancake.
  9. Cook the dough for about 2 to 3 minutes on each side, until lightly golden and firm.

Crepioca Snacks in the Airfryer:

  1. Remove the crepe from the pan and place it on a cutting board.
  2. Cut it into strips or squares about 2.5 cm wide.
  3. Place the cut pieces in the Airfryer basket, leaving space between them to allow air to circulate.
  4. Cook in a preheated airfryer at 200°C for 8-10 minutes until golden and crispy: the time depends on the size of the snacks and the power of your equipment. Keep an eye on the snacks the first time you prepare the recipe to adjust the cooking time if necessary.
  5. Remove the crepioca snack from the airfryer and let it cool on a rack.
FINALIZATION AND ASSEMBLY:
  1. Store snacks in an airtight container for up to 3 days to maintain crunchiness.
  2. To restore crunchiness after storage, reheat snacks in the Airfryer for 2 or 3 minutes at 180°C.
