FIT OAT BRIGADEIRO Ingredients:

– 240 ml gluten-free oat milk

– 1/3 cup(s) brown sugar

– 3/4 cup(s) gluten-free oat flour

– 1/4 cup(s) cocoa powder ABC

– 1 tablespoon vegan butter (or other butter of your choice)

Ingredients TO COMPLETE:

– vegan/gluten-free dark chocolate to taste (or cocoa nibs)

PREPARATION:

  1. Separate all ingredients and utensils needed. This recipe makes about 17 brigadeiros for every 2 servings, measured with 1 teaspoon (12-15 g each).
  2. Chop the vegan chocolate into small pieces if you prefer to use it as sprinkles, or use cocoa nibs.
  3. Gluten-free oat flour can be substituted with another oat flour depending on your preference or dietary restrictions.

PREPARATION:

FIT AVENA BRIGADEIRO – PASTA:

  1. Place the plant-based milk (or water) and brown sugar in a blender. Blend for about 1 minute until the sugar is completely dissolved.
  2. Add cocoa powder, vegan butter and gluten-free oat flour. Beat for another 4 minutes until smooth.
  3. Transfer the mixture to a small pan.
  4. Place the pan over low heat and stir continuously with a spatula.
  5. Cook for about 7 minutes or until the mixture thickens and forms a smooth, consistent mass that comes away from the pan completely.
  6. When it reaches the point, turn off the heat and transfer the dough to a plate.
  7. Cover with cling film in direct contact with the dough to prevent a skin from forming.
  8. Allow to cool to room temperature and then place in the refrigerator for about 1 hour to firm up.

FIT OAT BRIGADEIRO – MODELING:

  1. Remove the dough from the refrigerator and open the molds onto a plate.
  2. Lightly wet your palms with water. Using a teaspoon as a measure, take small portions of dough and form balls weighing about 12-15 g each.
  3. Dip the balls in the cocoa nibs or chopped vegan chocolate to coat them evenly.
  4. Arrange the brigadeiros in the molds.

FINALIZATION AND ASSEMBLY:

  1. Keep in the refrigerator. One hour before serving, remove from the refrigerator.
  2. Serve the Fit and vegan oat brigadeiro at room temperature or slightly chilled.
  3. Enjoy this healthy brigadeiro and satisfy your sweet tooth, with fewer calories.
