Ingredients Terrestrial Banana Puree

– 6 very ripe plantains

– 1 unit of lemon (juice)

– 4 tablespoons unsalted butter

– 2 cups boiling water

– 2 teaspoons grated ginger (juice)

– 1 1/2 cups coconut milk

– salt to taste

– pepper to taste THE

PREPARATION:

  1. Separate the recipe ingredients and utensils.
  2. Put a small pot of water on to boil to cook the plantain.
  3. Grate the ginger, place it in cling film, form a parcel and prick it with a toothpick to then extract the juice.
  4. Wash the lemon, cut it and squeeze it.

PREPARATION:

Terrestrial Banana Puree:

  1. Wash the plantains, dry them, peel them, cut them into slices of about 1 cm and sprinkle them with lemon juice.
  2. In a skillet over medium heat, melt half the butter.
  3. Add the chopped bananas, brown them for 2 minutes, add the boiling water (see quantity in the ingredients) and season with salt and pepper.
  4. Reduce the heat to low, cover the pan, and cook until the bananas are very soft, about 10 minutes; cooking time may vary if the banana is less ripe. In this case, you may need to add a little more boiling water to help the bananas cook.
  5. Once the bananas are cooked, using a blender in a pan or by passing them through a sieve, mash the bananas while still hot until you obtain a smooth puree.
  6. Return the pan to the heat and let the puree boil.
  7. Add the ginger juice, squeezing the plastic bag.
  8. Add the remaining butter and stir until melted.
  9. Add the coconut milk and beat to combine and form a creamy puree.
  10. Check the salt and pepper.

FINALIZATION AND ASSEMBLY:

  1. Place the plantain puree on a serving platter or, if you prefer, divide it into plates, next to your main course.
  2. Plantain puree with coconut milk is a perfect version to vary your menu, to serve with everyday fish dishes or even with that special weekend recipe.
