Airfryer feijoada cake – easy recipe, no frying


Feijoada cake in the airfryer: easy recipe, without frying, made with leftover feijoada. Crispy on the outside and soft on the inside




Use leftover feijoada to prepare these delicious cakes, crunchy on the outside and soft on the inside.

Recipe for 2 people.

Ingredients for the pasta – Feijoada Ravioli:

– 1 1/2 cups leftover feijoada (beans + meat)

– 1 tablespoon(s) of oil

– 1/4 cup(s) toasted cassava flour or enough

– 1 tablespoon chopped onion

– 1/2 clove of garlic, minced

– 1/4 unit of dedo-de-moça pepper, without seeds, chopped

– 2 tablespoons chopped coriander

– 1 teaspoon cumin (optional)

– salt to taste

– pepper to taste

– boiling water to taste (optional)

Ingredients FOR THE BREADING:

– 1 unit of eggs

– salt to taste

– pepper to taste

– 1 cup(s) of breadcrumbs

Ingredients FOR SPRAYING OR BRUSHING

– oil to taste

Ingredients TO SERVE:

– lemon to taste in quarters (optional)

– pepper sauce to taste (optional)

PREPARATION:

  1. The recipe for 2 servings yields about 10 gnocchi, measured with 1 tablespoon.
  2. Separate all the ingredients and utensils for the recipe.
  3. Place a kettle with water on to boil.
  4. Peel the onion and the garlic clove and chop them.
  5. Wash the chillies, remove the seeds and chop them.
  6. Wash, dry, chop the coriander and set aside on absorbent paper.

PREPARATION:

Feijoada Cake – Dough Preparation:

  1. In a food processor, blend the leftover feijoada (remove the bones, if present) until you obtain a puree.
  2. In a pan over low heat, heat the oil.
  3. Add the onion, garlic clove and chili pepper and sauté until the onion becomes transparent.
  4. Mix the feijoada puree and sauté until it boils. If it is too dry, add a little boiling water.
  5. Gradually incorporate the cassava flour until the dough is ready to curl.
  6. Season with salt and pepper and cumin (optional).
  7. Continue stirring until the dough no longer sticks to the bottom of the pan.
  8. Remove from heat, add chopped coriander and transfer the mixture to a serving plate.
  9. Cover with cling film in direct contact with the dough and place in the refrigerator to cool.

Model:

  1. Remove the dough from the refrigerator after it has cooled.
  2. If the dough is sticky, add more toasted cassava flour.
  3. Divide the dough into portions of about 1 tablespoon, forming balls.
  4. Repeat the process until you have the shape of all the cupcakes.

Breading and cooking in the Airfryer:

  1. Beat the eggs in a deep dish and season with salt and pepper.
  2. Place the breadcrumbs in another deep dish.
  3. Dip the gnocchi in the beaten egg(s) and then in the breadcrumbs, pressing well to coat them.
  4. Brush or drizzle the gnocchi with a little oil to get a crispy crust.
  5. Arrange the ravioli in the Airfryer basket, without overlapping them, and cook in the oven at 200°C for approximately 15-20 minutes or until golden brown.
  6. If necessary, depending on the quantity and capacity of your equipment, divide it into stages to accommodate all the gnocchi.
  7. Time may vary depending on the power of the Airfryer.

FINALIZATION AND ASSEMBLY:

  1. Reorder Feijoada cupcakes prepared in the Airfryer on a serving platter and serve as a snack or appetizer.
  2. Tip: Serve with lemon sauce and quartered peppers (optional).
