Mini Leek Quiches




Time: 1 hour

Ingredients:

  • 2 cups (tea) of wheat flour
  • 1/2 cup butter (tea).
  • 1/3 cup water (tea) (approx.)
  • Butter for greasing
  • Grated Parmesan cheese to taste

Filling

  • 2 tablespoons butter
  • 1 slice of bell peppers, chopped
  • 2 stalks of leek, chopped
  • Salt and chopped green chili pepper to taste
  • 1/2 cup (tea) of ricotta
  • 1/2 cup cream (tea).
  • 1 cup of milk (tea)
  • 1 tablespoon cornstarch
  • 4 eggs
  • 1/2 cup grated provolone cheese

Preparation method:

  1. For the filling, heat a pan with butter over medium heat and fry the peppers, leeks, salt and green chillies for 3 minutes.
  2. Turn off the heat, add the cream cheese, cream, milk, cornstarch, eggs and provolone. Book.
  3. For the dough, mix the flour, butter, egg and water until a smooth dough forms. Add more water if necessary.
  4. Roll out the dough with a rolling pin and line the bottom and sides of mini quiche moulds.
  5. Pour the filling over the pasta, sprinkle with parmesan cheese and bake in a preheated medium oven for 20 minutes or until cooked through and golden.
  6. Remove from the oven, leave to cool and unmold.
