Time: 3 hours (+6 hours rest)

Performance: 30 units

Ingredients:

  • 6 eggs (whites and yolks separated)
  • 6 tablespoons of sugar
  • 6 tablespoons of wheat flour
  • Margarine and wheat flour for greasing

Filling:

  • 2 cans of condensed milk
  • 1 can of cream
  • 1 can passion fruit juice (use the empty can of condensed milk to measure)

Coverage:

  • 1 tablespoon butter
  • 500 g of icing sugar

Preparation method:

  1. Using a mixer, beat the egg whites, add the sifted egg yolks and sugar, beating after each addition.
  2. Remove from the mixer, add the flour and mix gently.
  3. Place in a greased and floured 45cm x 30cm tin and bake in a preheated medium oven for 15 minutes or until cooked through and lightly golden.
  4. Remove from the oven, let cool and then cut into circles with a pastry cutter or the mouth of a glass.
  5. In a bowl, mix the filling ingredients and fill the dough circles, joining them two at a time.
  6. Meanwhile, in a bowl, place the topping ingredients and heat in a bain-marie, stirring constantly, until it cooks and becomes liquid.
  7. Remove from the heat, moisten the sposati well with the help of a fork, place them on a rack to drain well and leave them to dry for 6 hours.
  8. Wrap as desired and store well until next serving.
