What is artisanal ice cream?
“It is a product made without the addition of any chemical additives, i.e. stabilizers and emulsifiers. Using only fresh and good quality ingredients.”
What is the difference between artisanal and industrial ice cream?
“The difference lies in the size of the ingredients, that is, in the balance between them. In artisanal ice cream we have to rely on natural inputs, such as the sugar content in fresh fruit and the amount of fat in milk. Industrialized ice creams use stabilizers, colorants, emulsifiers and essences that aim to make the product more durable.”
How is artisanal ice cream made?
“Milk ice cream has a base made of milk, cream and sugar, which must be pasteurized at 90° C. To add flavors we can add natural fruit, chocolate or hazelnut paste, for example. Once the mixture is obtained, it is placed in the ice cream maker and then cooled until it reaches the ideal consistency of the ice cream.”
How long does artisanal ice cream last?
“Since artisanal ice cream does not contain chemical additives for preservation, its shelf life is short. This does not mean that it will “sour” in the freezer, but it will crystallize due to the passage of cold air inside the package.
