Paella is one of the most emblematic dishes of Spanish cuisine. It is no surprise that it has its own day: every 20th of September, the World Paella Daya special event for lovers of this delicacy.

Originally from the region of Valencia, paella has its roots in peasant culture, where it was prepared in large shallow pans and brought together fresh ingredients from the land and the sea. Over time, the dish has conquered the world, adapting to local flavors and ingredients, but without losing its essence as a meal shared with family and friends.

Jacaranda Restaurant

One of the renowned dishes of Jacarandá, a South American restaurant managed by chef Rodrigo Aguiar, is the Land and Sea (R$125)a rice in shrimp broth, finished with grilled shrimp, fried pork cheek from Jais cold cuts, aromatic herbs, Sicilian, dried pepper and confit garlic emulsion. The place is wooded, pet friendly and plays good music.

Paella Pepper

In Ipiranga, in a very busy gastronomic neighborhood, you can find one of the most traditional examples of paella in São Paulo. Paellas Pepe works like this: there you pay R$95 to serve as much as you want of the Spanish delicacy, which is prepared in two different corners of the room. When one finishes, the other rings the bell, so you know exactly where to go. The paella is prepared as it should be: full of seafood, various vegetables, chicken, rice and Spanish seasonings. The large and well-served prawns prove that there is no saving, despite the price of the service being one. Those who want to abandon this service at will, however, also have other options, such as black paella (R$ 285), seasoned with cuttlefish ink, and seafood paella (R$ 299), with fish fillet and a variety of seafood.

Badaue

Located in an elegant two-story house on the corner of Padre João Manuel and José Maria Lisboa streets, in Jardins, Badauê offers caiçara cuisine recipes with contemporary touches and prepared with the best fish and shellfish on the market. Among the delicious dishes on the menu, the highlight is the traditional one Marine Paella (R$338) – which serves 2 people well.

Mother Saint

On one side, Japanese tradition. On the other, Italian history. It is from the union of these two cultures, the Asian and the Mediterranean, that Mamma San was born, founded by partners Érica Maiera and Fernanda Prado Sampaio. Recently opened in Jardins, the atmosphere is comfortable and sophisticated, in addition to offering exclusive experiences, such as Omakase. On the menu, highlight Socarrat from the Costa Blanca (R$85)made with rice crust, octopus and aioli.

Aragon

Specializing in classic Spanish and Portuguese cuisine, Aragon Espírito Ibérico opened its doors on Amauri Street, in a large house on the corner of Av. Faria Lima. Heading the kitchen is chef Fernando Rios, grandson of the founder of the traditional Don Curro restaurant, which is why paella is the star of the menu. Among the delicious options on the menu, the highlight is the iconic Valencian Paella (R$ 320) – saffron rice, chicken, bisque sauce, mussels, shrimp, calamari, red peppers and peas (same recipe served at Don Curro for several years). The house also offers another dish proposal, Marine Paella (R$ 310) – saffron rice, bisque sauce, mussels, shrimp, squid, red peppers and peas – both recipes serve up to 2 people.
