Blackberry Cheesecake

Ingredients:
- 1 pack of cornstarch biscuits (200g)
- 4 tablespoons of margarine
Filling:
- 1 pack of blackberry flavoured gelatin powder
- 1/2 cup hot water
- 1 can of whey-free ice cream
- 4 tablespoons blackberry jam
- 2 tablespoons of water
Preparation method:
- Grind the biscuit in a blender and transfer it to a bowl.
- Add the margarine and work it in with your fingertips until it resembles crumbs.
- Line the bottom of a 20cm springform tin and bake in a preheated medium oven for 12 minutes or until lightly golden. Remove and leave to cool.
- Dissolve the gelatine in hot water and blend it in the mixer with the spreadable cheese and cream until you obtain a smooth cream.
- Pour over the cake, leveling it with a spatula and place in the refrigerator for 4 hours or until firm.
- In a pan, heat the gelatine with the water for 2 minutes.
- Let it cool and spread on the cake.
- Unmold carefully and serve.
