Blackberry Cheesecake

Ingredients:

  • 1 pack of cornstarch biscuits (200g)
  • 4 tablespoons of margarine

Filling:

  • 1 pack of blackberry flavoured gelatin powder
  • 1/2 cup hot water
  • 1 can of whey-free ice cream
  • 4 tablespoons blackberry jam
  • 2 tablespoons of water

Preparation method:

  1. Grind the biscuit in a blender and transfer it to a bowl.
  2. Add the margarine and work it in with your fingertips until it resembles crumbs.
  3. Line the bottom of a 20cm springform tin and bake in a preheated medium oven for 12 minutes or until lightly golden. Remove and leave to cool.
  4. Dissolve the gelatine in hot water and blend it in the mixer with the spreadable cheese and cream until you obtain a smooth cream.
  5. Pour over the cake, leveling it with a spatula and place in the refrigerator for 4 hours or until firm.
  6. In a pan, heat the gelatine with the water for 2 minutes.
  7. Let it cool and spread on the cake.
  8. Unmold carefully and serve.
