Sausage croquette

Ingredients:

  • 4 cups of milk (tea)
  • 5 tablespoons butter
  • 1 vegetable stock cube
  • 4 cups (tea) of wheat flour
  • 2 beaten eggs
  • 1 cup (tea) of breadcrumbs
  • Oil for frying

Filling

  • 2 tablespoons butter
  • 1 chopped onion
  • 500 g of minced sausage
  • 1 can drained green corn
  • 1/2 cup (tea) tomato sauce
  • Salt and chopped green chili pepper to taste

Preparation method:

  1. In a large pan, heat the milk with the butter and vegetable broth over medium heat.
  2. Cook for 5 minutes or until it starts to boil.
  3. Add the flour all at once, stirring with a wooden spoon until it forms a ball and no longer sticks to the bottom of the pan.
  4. Place on a flat surface and leave to cool.
  5. For the filling, heat a pan with butter over medium heat and fry the onion until wilted.
  6. Add the sausage, corn and sauté for 3 minutes.
  7. Add the tomato sauce, salt, green chillies, sauté for 2 minutes and turn off the heat.
  8. Open small portions of dough between your hands, divide the filling between them and close them to form the croquettes.
  9. Pass them through the beaten eggs and coat them in the breadcrumbs.
  10. Fry, a few at a time, in boiling oil until golden brown.
  11. Drain on absorbent paper and serve.
