cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
SPRINKLED COOKIES Ingredients:
– 1 cup(s) of acid tapioca starch
– 1/3 cup(s) oil
– 1/3 cup(s) of milk (or water)
– 1/3 cup(s) water
– 1/2 teaspoon(s) salt
– 1 teaspoon(s) of sugar
– 1/2 egg unit
– cold water to taste – enough to knead the dough
PREPARATION:
- If you prefer to make biscuits with tapioca starch without lactose, replace the milk with water. The biscuit becomes softer with milk.
- Separate the utensils and ingredients for the recipe.
- Beat the eggs in a bowl and measure the amount needed for the quantity you are preparing.
PREPARATION:
Tapioca Cookie – Dough:
- In a pan, heat the milk, oil, water, salt and sugar until it starts to boil.
- Pour the boiling mixture over the cassava starch in a bowl and stir well until the cassava starch absorbs the liquid.
- Allow the mixture to cool until lukewarm.
- When it is lukewarm, add the beaten egg(s) and mix well until you obtain a smooth and homogeneous mixture.
- Add the cold water, a spoonful at a time, mixing with your hands until you obtain a firm, but still slightly soft, dough.
Tapioca Cookie – Try:
- Place the mixture in a piping bag with a plain tip (or in a plastic bag with a cut tip).
- Shape a biscuit on the silicone mold, forming a tube about 7 cm long.
- Preheat the Airfryer to 200ºC and bake for 10 minutes to test the consistency.
- The time may vary depending on the power of your fryer, which is why it is necessary to do some testing.
- If necessary, adjust the dough with small amounts of milk or starch to improve cooking.
- Repeat this process as needed to ensure the cookies are cooked through.
Tapioca Cookies – Cooking in the Airfryer:
- Using a piping bag or a plastic bag, shape the pasta tubes as you prefer and place them in the silicone mold, keeping a space of 1 cm between them.
- Bake in a preheated fryer at 200ºC for about 10 minutes, or until the cookies are firm and lightly browned. Note: Cooking time may vary depending on the amount of cookies and the capacity of the fryer.
- Important: Do not open the Airfryer during cooking to avoid the biscuits deflating.
FINALIZATION AND ASSEMBLY:
- Remove the tapioca cookie(s) from the deep fryer and let cool completely before serving.
- Serve on a decorative plate or basket for a more attractive presentation.
- Store them in airtight containers.
