1 bowl(s), 1 pan(s), 1 piping bag with tip (1.5cm smooth or clear plastic bag cut at the tip), 1 mould(s) (for Airfryer)

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

SPRINKLED COOKIES Ingredients:

– 1 cup(s) of acid tapioca starch

– 1/3 cup(s) oil

– 1/3 cup(s) of milk (or water)

– 1/3 cup(s) water

– 1/2 teaspoon(s) salt

– 1 teaspoon(s) of sugar

– 1/2 egg unit

– cold water to taste – enough to knead the dough

PREPARATION:

  1. If you prefer to make biscuits with tapioca starch without lactose, replace the milk with water. The biscuit becomes softer with milk.
  2. Separate the utensils and ingredients for the recipe.
  3. Beat the eggs in a bowl and measure the amount needed for the quantity you are preparing.

PREPARATION:

Tapioca Cookie – Dough:

  1. In a pan, heat the milk, oil, water, salt and sugar until it starts to boil.
  2. Pour the boiling mixture over the cassava starch in a bowl and stir well until the cassava starch absorbs the liquid.
  3. Allow the mixture to cool until lukewarm.
  4. When it is lukewarm, add the beaten egg(s) and mix well until you obtain a smooth and homogeneous mixture.
  5. Add the cold water, a spoonful at a time, mixing with your hands until you obtain a firm, but still slightly soft, dough.

Tapioca Cookie – Try:

  1. Place the mixture in a piping bag with a plain tip (or in a plastic bag with a cut tip).
  2. Shape a biscuit on the silicone mold, forming a tube about 7 cm long.
  3. Preheat the Airfryer to 200ºC and bake for 10 minutes to test the consistency.
  4. The time may vary depending on the power of your fryer, which is why it is necessary to do some testing.
  5. If necessary, adjust the dough with small amounts of milk or starch to improve cooking.
  6. Repeat this process as needed to ensure the cookies are cooked through.

Tapioca Cookies – Cooking in the Airfryer:

  1. Using a piping bag or a plastic bag, shape the pasta tubes as you prefer and place them in the silicone mold, keeping a space of 1 cm between them.
  2. Bake in a preheated fryer at 200ºC for about 10 minutes, or until the cookies are firm and lightly browned. Note: Cooking time may vary depending on the amount of cookies and the capacity of the fryer.
  3. Important: Do not open the Airfryer during cooking to avoid the biscuits deflating.

FINALIZATION AND ASSEMBLY:

  1. Remove the tapioca cookie(s) from the deep fryer and let cool completely before serving.
  2. Serve on a decorative plate or basket for a more attractive presentation.
  3. Store them in airtight containers.
