Sardine Refuge

Difficulty: easy

Ingredients:

  • 1 cup milk (tea)
  • 1 tablespoon butter or margarine
  • Salt, black pepper and nutmeg to taste
  • 4 chopped tomatoes
  • 3 tablespoons chopped green chili pepper
  • 2 cans boneless sardines, drained (save the oil)
  • Grated parmesan for sprinkling

Preparation method:

  1. Cook the cassava in salted water until it is very soft.
  2. Use the pressure cooker to speed up the process.
  3. Pass through the juicer and, in a pan, heat the milk and margarine over a low heat, beating with a wooden spoon until you obtain a soft puree.
  4. Season with salt, pepper and nutmeg and set aside.
  5. In a pan, brown the onion in 2 tablespoons of sardine oil until soft.
  6. Add the cherry tomatoes and sauté for another 2 minutes.
  7. Stir in the green pepper, sardines and season to taste.
  8. Spread onto a medium 34cm x 20cm rectangular refractory baking tray and cover with the puree.
  9. Sprinkle with grated cheese and bake in a high, preheated oven for 30 minutes or until golden brown.
