THE Wellington fillet It is a dish with a lot of history. Originally the French recipe was called filet boeuf en croûte (beef fillet in batter). However, after the defeat of Napoleon Bonaparte at the Battle of Waterloo, the dish was renamed in honor of the British Arthur Wellesley, Duke of Wellington.




Traditionally the recipe combines a piece of filet mignon surrounded by a bed of mushrooms and bacon and, finally, wrapped in a layer of puff pastry.

Beef Wellington

Time: 1 hour

Ingredients:

  • 1 piece of beef fillet mignon (about 500 g)
  • Salt and black pepper to taste
  • 200g Dijon mustard
  • Sliced ​​parma ham 300 g
  • 1 onion
  • 2 heads of garlic
  • 300 g chopped Parisian mushrooms
  • 1 pack of puff pastry
  • 1 egg yolk
  • 1 tablespoon of water

Preparation method:

  1. Season the meat with salt and black pepper.
  2. On a plate, over high heat, seal the piece on all sides.
  3. Top with Dijon mustard. Book.
  4. On a smooth surface, covered with cling film, spread the slices of Parma ham.
  5. In a food processor, combine the onion and garlic.
  6. Transfer the mixture to a pan, add the chopped mushrooms and sauté until dry.
  7. Cover the ham with the sautéed mushrooms and wrap the meat with the ham, forming a roll. Book.
  8. On a smooth surface covered with cling film, roll out the puff pastry following the instructions on the package until it is 5 mm thick.
  9. Remove the plastic film from the meat roll, place it on top of the puff pastry and roll it up, sealing the ends well.
  10. Brush the dough with egg yolk mixed with water, transfer it to a mold and bake in a preheated oven (200°C) for 15 minutes.
  11. Open the oven, turn the meat to cook it completely and leave it to cook for another 15 minutes or until golden brown. Serve.
