However, since it is such a common ingredient in cooking, many people end up not realizing that there is a wide variety of salts available on the market and, therefore, they do not give the proper value to the properties of each of them at the time of purchase. .

A typical example is refined salt, present in almost all Brazilian table salt shakers. This is because, according to the chef, this type of table salt undergoes a refinement process, lose many minerals important for nutrition and obtaining a high level of sodium in its composition. “Therefore, choosing a good brand that preserves these elements is essential. I always buy natural, whole and glutamate-free salts,” says Fernanda.
In addition to the properties, the granulation of salts also interferes with the taste of food. That is, when preparing that delicious food, using fine salt or coarse salt can make a lot of difference!
According to Luvezuto, the finest salts are suitable for seasoning chicken, fish and vegetables; the more granulated ones are used for large pieces of protein, such as grilled meats, usually seasoned with coarse salt; smoked foods add flavor to meats and burgers; and fleur de sel, a more natural alternative to refined salt, is suitable for finishing dishes due to its delicate flavor. “Salt can also be added to sweet recipes to enhance the flavor and preparation of some drinks,” adds the chef.
However, be careful. In addition to the excessive consumption of salt which is harmful to health, the World Health Organization (WHO) recommends the consumption of 5 grams of salt per day. Therefore, it is essential not to weigh your hand with table salt, as excessive salting of a meal can ruin the dish.
Chef Luvezuto also explains that the too much table salt covers up the true taste of the food. “If there is any difficulty in seasoning with salt, it is worth tasting the food during preparation so as not to lose common sense,” she advises.
