Ingredients for Caesar salad
– 1 bunch of iceberg lettuce, washed and roughly chopped
– parmesan to taste, cut into thin slices (use a potato peeler)
Ingredients Chicken breast – Caesar salad
– 1 whole chicken breast(es), skinless, open in the center to speed up cooking
– 1/2 unit of lemon (juice)
– olive oil to taste for seasoning and grilling
– thyme to taste (leaves)
– salt to taste
– pepper to taste
Dressing Ingredients – Caesar Salad
– 4 canned anchovy fillets, washed to remove excess salt (optional)
– 2 small cloves of garlic, unpeeled, slightly crushed
– 1 tablespoon(s) of Sicilian lemon (juice)
– 2 units of eggs (yolk only)
– 2 tablespoons of mayonnaise
– 1 unit of seedless pepper, chopped
– 10 tablespoons of olive oil, more if necessary
– salt to taste
– pepper to taste
Crostini Ingredients – Caesar Salad
– 8 slice(s) of crustless bread, cut into cubes (or sliced ​​bread)
– olive oil to taste
PREPARATION:
1. Separate all the ingredients and utensils for the recipe.
2. Start by grilling the chicken breast (see preparation).
3. Tear the lettuce leaves, wash them well under running water and immerse them in a sodium hypochlorite solution.
4. If you purchased sliced ​​bread with a crust, remove the crust and cut it into cubes.
5. Using a vegetable peeler, remove the shavings from the parmesan.
6. Remember to look at the chicken and turn it over.
7. Wash the anchovy fillets well in a colander to remove excess salt.
8. Clean, chop and cut the ingredients.
9. Heat another non-stick pan to prepare the croutons.
PREPARATION:
Chicken Breast – Caesar Salad (do this step before starting the preparation):
1. Place a nonstick skillet over medium-high heat to heat.
2. Cut the chicken as directed in the ingredients.
3. Rub the lemon.
4. Season with a drizzle of oil, salt, pepper and thyme leaves.
5. Distribute the seasoning well over the meat.
6. When the pan is hot, grease it with a drizzle of oil, add the chicken and turn until the entire surface is golden.
7. Lower the heat to medium. Cover.
8. Grill the chicken for 10-15 minutes (turn halfway through cooking).
9. Continue pre-preparation.
Crostini – Caesar Salad:
1. Grease the pan with a drizzle of olive oil.
2. Add the bread cubes and, over a low heat, stir until they are golden and crispy.
3. Remove from the pan, drain well on absorbent paper and store in a bowl.
Chicken Breast – Caesar Salad:
1. Check that the chicken is well cooked.
2. It must be very humid.
3. Remove from the pan and leave to cool on a plate or tray.
4. In the meantime, prepare the sauce.
Dressing – Caesar Salad:
1. Using a fork, break up the anchovy fillets in a drizzle of oil.
2. Add the garlic and lemon juice and blend to combine the flavors.
3. Remove the garlic clove.
4. Add the egg yolk and continue beating until you obtain a smooth cream.
5. Add the mayonnaise and chilli and mix well.
6. Gradually add the remaining olive oil (drizzle) and beat vigorously until you obtain a creamy sauce.
7. Season with salt and pepper and set aside.
Caesar Salad:
1. Drain the iceberg lettuce leaves well.
2. Wash well under running water.
3. Dry or spin dry.
4. When ready to serve, place the lettuce in a bowl and drizzle with half the sauce.
5. Mix gently.
FINALIZATION AND ASSEMBLY:
1. Transfer the dressed salad to a serving plate or, if you prefer, divide it among the plates.
2. Arrange the chicken breast slices on the lettuce and drizzle with the remaining sauce.
3. Decorate with the parmesan flakes.
4. Finally distribute the croutons.
