Carreteiro rice under pressure: a complete, easy and delicious dish, made in just one pan, under pressure, to simplify your meal
Carreteiro Rice: A traditional dish, prepared under pressure, with dried or sun-dried meat, in just 1 pan.
Recipe for 4 people.

Ingredients Charque or dried meat
– 1 kg of dried meat (see preparation). (or jerkily)
Ingredients CARREEIRO RICE IN PRESSURE
– 200 g of bacon cut into cubes.
– oil to taste, for sautéing.
– 1 unit of onion, chopped.
– 1/2 carrot(s), peeled and grated.
– 2 stalks of celery, chopped.
– 2 cloves of garlic, chopped
– 1 unit of seedless pepper, chopped.
– 2 seedless tomatoes, chopped.
– 2 bay leaves
– 3 cups of rice
– 9 cups of boiling water.
– 1 teaspoon(s) of salt for cooking the rice + a little for seasoning.
– pepper to taste B
Ingredients TO COMPLETE:
– coriander to taste, chopped. (or parsley)
– potatoes with straw to taste
PREPARATION:
- Desalt and cook the dried or dried meat (see preparation).
- Separate the recipe ingredients and utensils.
- Wash, chop or grate all the ingredients of the recipe, including the parsley or coriander at the end.
- Wash the tomato, remove the seeds and cut it into cubes. Do the same with the chili pepper.
- Wash the rice under running water (optional).
- Bring a saucepan of water to the boil to cook the rice (see quantities in the ingredients).
PREPARATION:
Charque or dried meat (desalt) – (start this step at least 6 hours before preparation or the day before):
- Remove excess fat from dried or dried meat, cut it into medium cubes and wash it under running water.
- Place it in a bowl, cover with water and cover. Place in the fridge and after 2 hours change the water – repeat the operation 2 more times.
Charque or dried meat (cooking) – (do this step after desalting the meat and before starting pre-preparation):
- Drain the meat and place it in the pressure cooker.
- Cover with water and bring to the boil: discard this water as soon as it boils.
- Cover the meat again with water and cover the pan.
- When it comes to pressure, reduce the heat and cook for 40 minutes.
- While the meat is cooking, begin preparation (step 2).
Dried or dried meat (cooking):
- Once the cooking time has elapsed, turn off the heat, remove the pressure and check the cooking of the meat: it must be very tender.
- Remove the meat from the pan, shred it with two forks and set it aside.
- Measure the amount of meat needed for the recipe: you will need the same amount of rice in cups. The excess can be frozen.
Carreteiro rice under pressure:
- In the same pressure cooker, over medium heat, brown the bacon cubes with a drizzle of oil.
- Remove the bacon from the pan, add another drizzle of oil if necessary.
- Add the jerky or chopped dried meat and brown over low heat. Remove from the pan and set aside with the bacon.
- Add a little more oil, add the chopped onion and fry for 2 minutes.
- Add the celery and carrot. Brown for a few more minutes.
- Reduce the heat to low, add the chopped garlic and chilli and scrape the bottom of the pan well with a spatula to incorporate all the flavours.
- Increase the heat to medium, add the chopped tomatoes and brown them a little more.
- Season with salt and pepper.
- Add the rice and bay leaf to the pan and mix with the vegetables. Brown for 2 or 3 minutes
- Return the bacon cubes and reserved beef jerky or jerky to the skillet.
- Add boiling water (see quantities in the ingredients) and season with salt.
- Cover and let it come under pressure over high heat.
- As soon as it reaches pressure, lower the heat and cook for 3 minutes.
- Turn off the heat, remove the pressure and open the pan: the rice should be cooked and still have broth.
- If necessary, add salt, remove the bay leaf, add the chopped coriander or parsley and mix well.
- Cover and let rest for 2 or 3 minutes.
FINALIZATION AND ASSEMBLY:
- Transfer the carreteiro rice to a plate, or distribute it directly onto plates, preferably deep ones.
- Finish with straw potatoes on top.
