Portuguese smoothie cake: wheat-free, easy to prepare and perfect for those looking for a practical, gluten-free meal
The simplest and fastest gluten-free savory dough, made in a blender, with a filling inspired by Portuguese pizza

Ingredients for the smoothie cake dough (gluten-free):
– 3 units of eggs
– 2 cups of whole milk
– 1 cup(s) oil + a little to grease the pan. (or olive oil)
– 3 tablespoons of parmesan (optional)
– 2 cups rice flour + a little to sprinkle the pan. (or mix of gluten-free flours)
– salt to taste
– 3 teaspoons of chemical yeast THE
Ingredients for the Portuguese filling
– 150 g of mozzarella, grated.
– 3 units of tomato, without seeds, cut into strips.
– 3/4 units of onion, in thin half-moons.
– 195 g of cooked ham, cut into strips.
– egg to taste, boiled.
– salt to taste
– olive oil to taste
– dried oregano to taste THE
Ingredients TO COMPLETE:
– 1 and 1/2 tablespoons of grated parmesan, or as much as you like.
PREPARATION:
- For a savory cake like the one in the photo, use a 25 cm pan – 6 portions.
- Separate the utensils and ingredients for the recipe.
- The substitution amount of gluten-free flour in this recipe was 1:1 compared to wheat. If you are using a preparation (gluten-free flour mix), check the package to see if the consumption is 1:1, otherwise adjust.
- Place the eggs in a pot of cold water and place over high heat. When it boils, reduce the heat and cook for 8-10 minutes. Drain, cover with cold water and leave to cool.
- Preheat the oven to 180°C.
- Wash the tomatoes, remove the seeds and cut them into strips.
- Wash and peel the onion(s) and cut them into thin half-moons.
- Cut the ham into slices and then the slices into strips.
- Remove the stones from the olives and cut them into slices.
- Grate the cheese, the mozzarella on the thick side and the parmesan on the fine side.
PREPARATION:
Basic dough for blended cake (gluten-free):
- Place the egg(s), milk, oil, salt, parmesan (optional) and gluten-free flour in a blender.
- Beat until a homogeneous mass forms.
- Turn off the blender and add the yeast.
- Book.
Portuguese Smoothie Cake (gluten-free):
- Peel the egg(s) and chop them coarsely and/or cut them into slices (if desired, keep a few slices aside for decoration).
- Grease the pan with olive oil and sprinkle with gluten-free flour.
- Pour half the mixture into the pan, filling the entire bottom.
- Add half of the filling ingredients: strips of ham, sliced olives, strips of tomato, half-moons of onion, grated mozzarella and chopped or sliced hard-boiled egg. Sprinkle with dried oregano.
- If you want the filling to be more visible at the top, put all the mozzarella “inside” the cake.
- Cover with the rest of the dough and level, lightly tapping the mold on the surface.
- Arrange the rest of the filling on top.
- Decorate with sliced eggs (previously reserved – this decoration is optional)
- Spread the oregano and finally sprinkle with the parmesan (optional) – if you sprinkle the parmesan your filling will be “covered”.
- Place in the preheated oven at 180°C and cook for 45-50 minutes or until completely cooked.
- To make sure the cake is cooked, test with a toothpick by inserting it into the center of the cake and, if it comes out clean, it is ready.
FINALIZATION AND ASSEMBLY:
- Unmold the Portuguese smoothie cake (gluten free) on a serving plate.
- Serve hot or at room temperature.
