Capeletti with chicken

Time: 50 minutes

Ingredients:

  • 2 tablespoons of oil
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 4 ripe seedless tomatoes, cut
  • 1 cup green corn
  • 1 chicken bouillon cube
  • 1 1/2 cups cooked, shredded chicken
  • 1/2 cup (tea) tomato sauce
  • 1 cup cream (tea).
  • 1/2 cup cream cheese (tea).
  • Salt, black pepper and chopped parsley to taste
  • 1 pack of capeletti with cheese cooked al dente (400g)
  • 1 cup grated mozzarella
  • 4 tablespoons grated parmesan

Preparation method:

  1. In a pan, over medium heat, heat the oil and fry the onion and garlic for 3 minutes.
  2. Add the cherry tomatoes and sauté for 3 minutes.
  3. Add the corn, chicken broth, shredded chicken, and tomato sauce and sauté for 5 minutes, stirring.
  4. Add the cream, cream cheese and season with salt, pepper and parsley.
  5. Arrange the capes in a medium baking dish, cover with the sauce, sprinkle with mozzarella and parmesan and bake in a medium preheated oven for 15 minutes or until golden brown.
  6. Serve immediately.
