Capeletti with chicken
Time: 50 minutes

Ingredients:
- 2 tablespoons of oil
- 1 onion chopped
- 2 cloves garlic, minced
- 4 ripe seedless tomatoes, cut
- 1 cup green corn
- 1 chicken bouillon cube
- 1 1/2 cups cooked, shredded chicken
- 1/2 cup (tea) tomato sauce
- 1 cup cream (tea).
- 1/2 cup cream cheese (tea).
- Salt, black pepper and chopped parsley to taste
- 1 pack of capeletti with cheese cooked al dente (400g)
- 1 cup grated mozzarella
- 4 tablespoons grated parmesan
Preparation method:
- In a pan, over medium heat, heat the oil and fry the onion and garlic for 3 minutes.
- Add the cherry tomatoes and sauté for 3 minutes.
- Add the corn, chicken broth, shredded chicken, and tomato sauce and sauté for 5 minutes, stirring.
- Add the cream, cream cheese and season with salt, pepper and parsley.
- Arrange the capes in a medium baking dish, cover with the sauce, sprinkle with mozzarella and parmesan and bake in a medium preheated oven for 15 minutes or until golden brown.
- Serve immediately.
