Muscle with pumpkin

Ingredients:
- 1 tablespoon of oil
- 1kg of muscle or shoulder cubes
- 2 cloves garlic, minced
- 1 cube of meat broth
- Salt and black pepper to taste
- 1 bay leaf
- 3 cups diced pumpkin
- 2 tablespoons chopped parsley for sprinkling
Preparation method:
- Heat a pressure cooker with oil and brown the meat until all the water has dried up.
- Add the garlic and onion and sauté for 5 minutes or until golden brown.
- Pour the hot water up to the level of the meat, add the meat broth, salt, pepper and bay leaves and cover the pan.
- Leave to cook for 25 minutes from when the pressure starts and remove from the heat.
- Wait for all the pressure to release, open and reheat without the lid.
- Add the pumpkin and cook for 15 minutes or until softened and almost all the liquid has dried up.
- Transfer to a serving plate, sprinkle with parsley and serve.
