Creamy wheat-free corn flour cake, typical of the countryside and very easy to prepare
.The real creamy cornmeal cake, which contains no flour in the dough, made in the blender, with semi-matured Minas cheese – our “country brownie”.
Recipe for 4 people.

Ingredients CREAMY FUBÁ CAKE
– 1 cup(s) of semi-mature cheese grated in the coarse part
– 3 tablespoons of corn starch, sifted
– 1 1/2 cups mimosa corn flour. sieved
– 4 units of eggs
– 4 cup(s) of milk
– 3 tablespoons unsalted butter + a little to grease the pan
– 2 cups of sugar + a little to sprinkle the mold
– 1 tablespoon(s) of chemical yeast B
– 1/2 unit of lemon (zest)
PREPARATION:
- Separate the recipe ingredients and utensils.
- To make the recipe for 2 people, use a 20 cm square pan and you will get a cake with 9 square pieces. Increase the size for larger portions.
- Preheat the oven to 180°C, if your oven has a lower temperature we recommend cooking the cake at 160°C.
- Grate the semi-matured Minas cheese on a coarse grater
- Sift the flour and cornmeal into a bowl and set aside.
- Wash and dry the lemon (optional) and peel the peel. Book on absorbent paper.
- Grease the pan with butter and sprinkle with sugar.
PREPARATION:
Creamy cornmeal cake:
- In a blender, beat the eggs, milk, butter and sugar until smooth.
- Add the grated semi-mature cheese, the sifted cornflour and flour and continue beating until you obtain a smooth cream.
- Finally, add the yeast and lemon zest and mix, without beating.
- Place on a greased and sprinkled baking tray.
- Place in the preheated oven at 180°C and cook for about 50 minutes.
- To check if it is cooked, do the toothpick test: place the toothpick in the center of the cake, if it comes out clean, it is ready.
- Turn off the oven, remove the cake from the oven.
- Let it cool.
FINALIZATION AND ASSEMBLY:
- Serve the creamy cornmeal cake in squares.
