Fillet ingredients

– 400 g fillet mignon steaks (2 steaks of 100 g each per person) (or rump steaks)

– salt to taste

– pepper to taste THE

– 2 tablespoons unsalted butter

Mustard sauce ingredients

– 2 tablespoons of water

– 1/2 glass of white wine

– 2 tablespoons Dijon mustard (or mustard) THE

– 1 cup(s) of fresh cream

– salt to taste

– pepper to taste THE

Ingredients TO COMPLETE:

– freshly ground black peppercorns to taste

PREPARATION:

  1. Separate the necessary ingredients and utensils.
  2. Season the steaks with salt and pepper.

PREPARATION:

Fillet in mustard sauce:

  1. In a skillet, melt the butter over medium heat and grill the steaks for 2 minutes on each side or until desired doneness. Remove from the oven and set aside on a serving plate, covered with aluminum foil.
  2. In the same pan, add the water (see quantities in the ingredients) and scrape the bottom well to remove any meat residues.
  3. Add the wine and let the alcohol evaporate for about 2 minutes.
  4. Add the mustard and stir to combine.
  5. Add the cream, adjusting salt and pepper.
  6. Cook until the sauce has thickened slightly.
  7. Filter the sauce to remove residues.
  8. Return the sauce to the pan, add the steaks and heat quickly over high heat.

FINALIZATION AND ASSEMBLY:

  1. Pour half the sauce onto the plates, spreading it to cover the bottom.
  2. Arrange the steaks on top of the sauce and drizzle with the rest, without completely covering the steaks.
  3. Finish the fillet in mustard sauce with freshly ground black pepper.
  4. Follow-up tip: gratin cauliflower.
