Potato meatballs in the pressure cooker Ingredients:
– 350 g of small potatoes (ball type), whole
– 1/2 unit of onion coarsely chopped
– 1 small garlic clove(s), coarsely chopped
– 1 teaspoon fresh rosemary (leaves only)
– 1/2 unit of lemon (juice)
– 2 tablespoons of olive oil
– 1/2 cup(s) of water
– salt to taste
– pepper to taste THE

– chopped parsley to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Wash the potato balls well, keeping them whole.
- Peel and coarsely chop the onion and garlic.
- Wash and chop the rosemary leaves.
- Wash, cut and squeeze the juice from the lemon.
PREPARATION:
Potato meatballs in the pressure cooker:
- In a blender add the onion, garlic, rosemary, lemon juice, olive oil, water, salt and pepper.
- Beat until you obtain a homogeneous mixture. Taste and adjust seasoning if necessary.
- Transfer the mixture to the pressure cooker.
- Add the potatoes, mixing well so that they are coated in the seasoning.
- Place the pan on high heat and, as soon as it reaches pressure, lower it to medium heat.
- Cook for 5 minutes.
- Once the cooking time has elapsed, turn off the heat and let the pressure release naturally.
- While waiting, wash, dry and chop the parsley for the finishing.
FINALIZATION AND ASSEMBLY:
- Carefully open the pan and transfer the “potatoes” prepared in the pressure cooker on a serving plate or, if you prefer, serve directly on plates.
- Top with chopped parsley over the potato balls.
