PREPARATION:
- Wash the cauliflower well. Cut it into steaks, lengthwise, about 2 cm.

PREPARATION:
Cauliflower – Pre-cooking (do this step before continuing the pre-preparation):
- Bring water to a boil in a pot or pan with a steam rack.
- Cauliflower cooking:
- Pan: Salt the water and add the cut cauliflower, when it starts boiling again, lower the heat to medium temperature and cook until tender.
- Steam: Place the cut cauliflower in the basket or colander, sprinkle with salt, place over the pan with boiling water, cover and cook.
- Once cooked al dente (estimated time 5 minutes), remove it from the pan or steam it, transfer it to a cutting board and set it aside.
- Return to preliminary preparation, point 3.
Cauliflower gratin – Assembling and Finishing:
- In a bowl add the olive oil, paprika (optional), grated parmesan, salt and pepper and mix well.
- Using a pastry brush, spread the seasoning over the sliced cauliflower, covering the entire surface.
- Arrange the cauliflower pieces on plates and place in the preheated oven or deep fryer for about 5 minutes to let the cauliflower absorb the flavors of the dressing.
- Remove from the oven, place the mozzarella on top and finally sprinkle with a little grated parmesan.
- Return to the oven to brown the cheese and get a golden crust – about 15 minutes or 8 minutes in the Airfryer (the time depends on the power of your equipment).
- Halfway through the cooking time, rotate the refractory materials to brown them evenly.
FINALIZATION AND ASSEMBLY:
- Remove cauliflower au gratin (in steaks) from the oven or fryer and serve in refractory dishes or on individual plates.
