Ricotta cake (dessert): a practical and easy dessert, made with the blender, striking for its flavour, consistency and ease of preparation




A very simple, quick and delicious dessert recipe made with the blender.

Recipe for 4 people.

Classic (no restrictions), Vegetarian

Preparation: 01:00 + cooling time

3 bowl(s) (1 optional), 1 colander(s), 1 pan(es) (round, lined with baking paper), 1 spatula(s)

EQUIPMENT

conventional + blender + mixer (optional)

METERS

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients RICOTTA CAKE (sweet)

– 360 g of ricotta

– 1 can(s) of condensed milk

– 1 can(s) of milk (use the same can of condensed milk as a measurement)

– 4 units of eggs

– 4 tablespoons of wheat flour + a little for dusting the pan

– 2 teaspoons of chemical yeast

– 1 teaspoon(s) of vanilla essence

– raisins to taste (optional)

– oil to taste (to grease the baking paper) (optional)

Ingredients TO FINISH

– icing sugar to taste, for sprinkling

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. Line a round baking tray with baking paper – bottom and edges. If necessary, grease the baking paper with oil. For 4 people, use a 25cm pan to obtain a shallow cake.
  3. Preheat the oven to 180°C.
  4. Add eggs 2 ways (choose one):
    • Beat whole eggs in a blender.
    • Separate the egg yolks and whites and beat the egg whites with a mixer (the dough becomes a little lighter)
  5. Sift the flour into a bowl.
  6. Cut the ricotta into small pieces.

PREPARATION:

Ricotta Cake (sweet):

  1. Place the condensed milk, milk, eggs (or if you prefer just the yolks) and the chopped ricotta in a blender and blend until you obtain a smooth and homogeneous mixture.
  2. Transfer the dough into a bowl.
  3. Add the sifted flour, little at a time, and mix to combine.
  4. Stir in the raisins (optional).
  5. Add the yeast and mix.
  6. Optional – With the help of a planetary mixer, whip the egg whites until stiff peaks form and add them to the dough, making circular movements, so as not to lose the air.
  7. Transfer the dough to the baking tray lined with baking paper.
  8. Place in a preheated oven at 180°C and cook for about 30-40 minutes, or until the surface is golden and compact, without being dry (if tested with a toothpick it should be a little dirty).
  9. Turn the oven off and remove from the oven.
  10. Leave to cool and turn out the cake onto a cutting board.
  11. Turn over again and place on a serving plate.

FINALIZATION AND ASSEMBLY:

  1. Serve the (sweet) ricotta cake in pieces, dusted with icing sugar.
