AMERICAN CABBAGE SALAD (COLESLAW) Ingredients:

– 2 cups white cabbage, sliced ​​or grated

– 1 cup(s) red cabbage, sliced ​​or grated

– 2/3 carrot(s), peeled and sliced ​​or grated

– 1/2 unit of red onion, sliced

YOGURT SAUCE WITH HERBS Ingredients:

– 1 and 1/2 cups of natural yogurt

– 1 unit of lemon (juice)

– fresh aromatic herbs (thyme, parsley, chives, etc.) to taste * suggestion of 1 and 1/2 tablespoons for every 2 portions

– salt to taste

– pepper to taste THE

PREPARATION:

  1. Cut the white and red cabbage very finely. This process can be done with a grater or a mandolin.
  2. Soak sliced ​​or grated cabbage in a sodium hypochlorite solution and leave for 15 minutes.
  3. While the cabbage is soaking, peel it and cut it into thin strips or grate the carrot.
  4. Finely slice the red onion (optional).
  5. Wash well and chop your favorite fresh herbs. If desired, mix it up with a little of each. Leave wrapped in absorbent paper.
  6. Squeeze in the lemon juice to use in the sauce.
  7. Set aside all the utensils and other ingredients needed for the recipe.

PREPARATION:

Herbed yogurt sauce:

  1. In a jar with a lid, mix the yogurt, lemon juice and herbs.
  2. Season with salt and pepper to taste.
  3. Cover and shake the pot to obtain a smooth sauce.
  4. Store in the refrigerator until ready to assemble.

Cabbage:

  1. Drain the cabbage from the sodium hypochlorite solution.
  2. Wash well, dry and spin.

American coleslaw (cole slaw):

  1. In a bowl, place the chopped cabbage (red and white), the onion (optional) and the carrot.
  2. Shake the pan containing the sauce well to mix it well.
  3. Drizzle the vegetables with the prepared yogurt sauce and mix well until all the ingredients are well coated.
  4. Let the salad sit for 30 minutes in the refrigerator to allow the flavors to intensify.
