Soft and warm flatbread with stretchy cheese will not leave anyone indifferent – khachapuri was invented in Georgia, but it is prepared everywhere. Now in your kitchen: we offer a lazy and quick option that doesn’t even require an oven.
Ingredients:
- Flour – 220 g;
- Kefir – 150 ml;
- Egg – 2 pieces;
- Sugar – ½ teaspoon;
- Salt – a pinch;
- Baking powder – 5 g;
- Suluguni cheese – 150 g;
- Neutral vegetable oil – 2 tablespoons;
- Butter – a little for greasing.
How to cook:
- Beat kefir with egg, sugar, salt and vegetable oil. Add sifted flour with baking powder in portions, stirring constantly with a whisk. Knead the elastic dough and place it under film in the refrigerator for 10 minutes.
- Prepare the filling – grate the suluguni on a coarse grater, add the egg and divide into two portions – depending on the number of future flatbreads.
- Take out the dough and divide it in half. Spread the halves, place the cheese and egg in the center of each and bring the edges together to form something like a large khinkali. Snap the “tail” so the cheese stays inside and roll back through the rolling pin to get a flat cake the diameter of your pan or a little smaller.
- Cook the flatbreads in a dry, covered pan for about 3 minutes on each side – they will brown nicely. Serve brushed with butter.
