Crackling pururuca

Time: 2h (+6h in the fridge)

Difficulty: easy

Ingredients:

  • 2kg of diced bacon
  • 1 cup of oil (tea).
  • Juice of 1 lemon
  • 2 cloves of garlic, pressed

Preparation method:

  1. Heat a high pan with oil and brown the bacon, with the pan covered, for 20 minutes, stirring occasionally to prevent it from sticking or until it becomes opaque.
  2. Remove the bacon from the pan, reserve the oil in the pan and transfer to a bowl.
  3. Season with salt, lemon and garlic and refrigerate for 6 hours.
  4. Heat the pan with the reserved oil and brown the cracklings until crispy.
  5. Drain on absorbent paper and serve.
