Crackling pururuca
Time: 2h (+6h in the fridge)
Performance: 8 servings
Difficulty: easy
Ingredients:
- 2kg of diced bacon
- 1 cup of oil (tea).
- Juice of 1 lemon
- 2 cloves of garlic, pressed
Preparation method:
- Heat a high pan with oil and brown the bacon, with the pan covered, for 20 minutes, stirring occasionally to prevent it from sticking or until it becomes opaque.
- Remove the bacon from the pan, reserve the oil in the pan and transfer to a bowl.
- Season with salt, lemon and garlic and refrigerate for 6 hours.
- Heat the pan with the reserved oil and brown the cracklings until crispy.
- Drain on absorbent paper and serve.
