Mini courgette pizzas with cherry tomatoes: a light option for a low carb appetizer or side dish

Ingredients Mini Zucchini Pizza With Cherry Tomatoes
– 1 large courgette, cut into 1.5 cm thick slices
– 1/2 cup(s) of grated parmesan
– 1/4 cup(s) diced peeled tomatoes (with juice)
– 1/4 cup(s) of ricotta
– olive oil to taste
– pink salt to taste (or sea salt) B
– pepper to taste B
Ingredients for finishing and decorating
– 5 cherry tomatoes, cut in half
– fresh oregano to taste (or dried oregano) B
– extra virgin olive oil to taste
PREPARATION:
1. Separate all the ingredients and utensils for the recipe.
2. Grill the courgettes (see preparation).
3. Sanitize, grate, chop and cut the other ingredients.
4. In a bowl, roughly crush the diced peeled tomato with part of the juice until it forms a thicker sauce, with the consistency of a puree.
PREPARATION:
Mini Zucchini Pizza: (this step must be done before starting the pre-preparation)
1. Clean and cut the courgettes into 1.5 cm slices.
2. Heat a non-stick pan to grill the courgettes.
3. In a bowl, season the courgette slices with salt and pepper.
4. Add the olive oil to the heated pan and brown the courgettes. Leave to act for a few minutes until golden.
5. Turn and brown on the other side.
6. Continue pre-preparation.
Mini Zucchini Pizza: (cooking)
1. On a serving plate, or a microwave-safe baking dish, arrange the courgette slices and cover each with a thin layer of tomato sauce.
2. Arrange a layer of ricotta on top and sprinkle with grated parmesan.
3. Decorate with two halves of cherry tomatoes and finish by sprinkling a pinch of oregano.
4. Place in the microwave for a minute to heat the tomato and melt the cheese (time may vary depending on your microwave).
FINALIZATION AND ASSEMBLY:
1. Serve the courgette pizzas on a serving plate or distribute them among the plates.
2. Finish with a drizzle of extra virgin olive oil.
