Fried Polenta With Parmesan
Time: 1h (+4h rest)
Performance: 2 servings

Ingredients:
- 1 cup cornmeal (tea)
- 3 cups (tea) of water
- 2 tablespoons of oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh rosemary
- 1 cube of vegetable broth
- Salt and black pepper to taste
- Oil for greasing and frying
- Grated Parmesan for sprinkling
Preparation method:
- Dissolve the cornmeal in 1 cup of water.
- Heat a large pan over medium heat with the oil and butter and brown the garlic with the rosemary.
- Pour in the remaining water, vegetable broth, salt, pepper and bring to the boil.
- Add the dissolved cornmeal, stirring until it boils.
- Cover and cook for 30 minutes, stirring occasionally, over low heat.
- Transfer to a greased medium baking sheet and let rest for 4 hours.
- Cut them into strips and fry them, little by little, in boiling oil until golden.
- Drain them on absorbent paper and serve sprinkled with parmesan.
