PREPARATION:

PIE DOUGH 3 ingredients – Bake and cake:

1. In the food processor, mix the cubed butter with the cream. If you prefer, mix the ingredients in a bowl with a fork and then with your hands.

2. Gradually add the flour and work the dough with your hands until it comes apart. Depending on the flour, you may need a smaller or larger amount.

3. Divide the dough, separating about â…” of it for the bottom.

4. Roll out the dough with a rolling pin on a smooth and lightly floured surface. The size should be large enough to cover the bottom and sides of the pan(s).

5. Place the dough on the rolling pin, roll it up and cover the shape, rolling the dough over the shape(s)

6. Line the bottom and sides of the molds with a removable base. Prick the dough several times with a fork to prevent it from swelling.

7. Save the rest of the dough for the top of the cake, wrapped in cling film to prevent it from drying out.

BANANA FILLING:

1. Peel and slice the bananas into thin slices.

2. In a bowl, mix the cut bananas, sugar and cinnamon.

3. Set aside.

BANANA CAKE (ASSEMBLY):

1. Place the banana filling inside the mold lined with the dough. Level well.

2. Roll out the remaining reserved dough with a rolling pin.

3. Make strips of the same thickness to cover the cake.

4. Place the strips on the banana filling in one direction.

5. Cover with the rest of the strips, arranging them in the other direction, forming a diamond pattern, which allows you to see the filling.

6. Brush the dough with the beaten egg, mixed with a little water and a pinch of salt.

7. Conclude by dusting the surface of the cake with icing sugar.

8. Place it on a larger baking tray to prevent it from dirtying the oven.

9. Place in the preheated oven at 180°C and cook for about 30 minutes or until golden and crispy (the time may vary depending on the size of the cake you are preparing).

10. If you have any dough left over, wrap it in cling film and freeze it for the next time.

1. Unmold the banana cakearrange on a serving plate.

2. Sprinkle cinnamon over the top of the cake

3. Serve hot or reheat in the oven to 160°C when ready to serve.

4. Recommended pairings: ice cream or other ice cream of your choice.
