A complete and easy to prepare vegetarian meal, in the Airfryer, a stuffed and gratinated courgette that surprises
A courgette filled with vegetarian cheese, gratinated in the Airfryer

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
COURGETTES Ingredients:
– 2 units of courgettes
– salt to taste
VEGETARIAN FILLING (CHEESE) Ingredients:
– 150 g of chopped ricotta
-75 g of provolone
– 1/2 unit of tomato, without seeds, cut into cubes
– 1/4 cup(s) of ready-made tomato sauce
– parsley to taste, chopped
– salt to taste
– pepper to taste B
Ingredients TO COMPLETE:
– mozzarella to taste, grated
Ingredients FOR GREASING/BRUSHING:
– oil to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Wash and dry the courgettes.
- Wash the tomatoes, remove the seeds and cut them into cubes.
- Wash and dry the parsley, chop it and set it aside on absorbent paper.
- Grate the provolone on the fine side of the grater or process it
- Grate the final mozzarella on the coarse side of the grater.
PREPARATION:
Zuchinis:
- On a cutting board, divide the courgettes in half lengthwise.
- Using a spoon, remove the core with the seeds, forming a cavity into which to insert the filling.
- Season the inside of the courgettes with a little salt.
- Place them on the microwave plate and cook them, at high power, for about 1 minute so that they are cooked perfectly: they will finish cooking in the airfryer.
- Remove from microwave and dry.
Vegetarian filling (cheese):
- In a bowl, mash the ricotta, add the grated provola and mix.
- Add the tomato sauce little by little – depending on the humidity of the ricotta, the quantity may vary – until you obtain a consistent filling.
- Add the tomato cubes and chopped parsley.
- Season with salt and pepper.
Stuffed and gratinated courgettes in the Airfryer:
- Preheat the Airfryer to 160°C.
- Distribute the filling into the courgette cavities, leveling the surface.
- Spread the grated mozzarella on top.
- Spray or brush the mozzarella lightly with a drizzle of oil.
- Place the stuffed courgettes in the Airfryer basket, leaving a small distance between them to allow the air to circulate – depending on the quantity, cook them in stages.
- Place the basket in the drawer and insert it into the appliance.
- Close the drawer and bake at 160°C for about 15 minutes or until the cheese melts and turns golden.
- Open the drawer, turn off the fryer, remove the courgettes.
FINALIZATION AND ASSEMBLY:
- Reorder the stuffed courgette(s) au gratin in the Airfryer on a serving plate or, if you prefer, distribute it directly onto the plates.
