Rustic, simple and irresistible country potatoes: fresh Italian country style ingredients, roasted with garlic, onion and rosemary




Practical and aromatic recipe of roasted potatoes with onions, garlic and rosemary, perfect for enriching any main dish.

Country potatoes ingredients:

– 500 g of small potatoes (ball type)

– 250 g of white chives

– 2 whole heads of garlic (without peeling them) – see recipe

– 2 tablespoons of extra virgin olive oil or to taste

– coarsely chopped salt to taste (or fleur de sel) THE

– black peppercorns to taste, chopped with a knife ab

– 2 bunches of fresh rosemary

Ingredients TO COMPLETE:

– chopped parsley to taste (optional)

– extra virgin olive oil to taste

PREPARATION:

  1. Separate the utensils and ingredients for the recipe.
  2. Wash the potatoes well, leaving the peel.
  3. In a large pan, pre-cook the potatoes for 15-20 minutes with salt, after boiling, until al dente (do not cook them completely) – if the potatoes are smaller, the time will be shorter, so check them.
  4. Peel the white chives. If the onions are larger, divide them in half so that they are proportionate in size to the potatoes.
  5. Prepare the heads of garlic: cut the ends, place them in aluminum foil, season with oil, salt, pepper and close the aluminum foil, forming a small package.
  6. Crush the black peppercorns or use a coarse-sided grinder.
  7. Once the potatoes are al dente, drain them and let them cool.

PREPARATION:

Country potatoes:

  1. Place the pre-cooked potatoes, onion and garlic clove in a baking dish.
  2. Season with coarse salt, coarsely ground black pepper and drizzle with extra virgin olive oil.
  3. Add the sprig(s) of fresh rosemary and the sachet with the head(s) of garlic to the ingredients.
  4. Distribute the ingredients on the baking tray, making sure they do not overlap so that they cook evenly.
  5. Place in a preheated oven at 200°C for 40 minutes. Turn the ingredients halfway through cooking to ensure even browning.

FINALIZATION AND ASSEMBLY:

  1. Remove the pan from the oven and remove the rosemary sprig(s).
  2. Carefully open the foil. Remove the skins from the roasted garlic cloves and mix them gently with the potatoes and onions.
  3. Serve to country potato accompanied by the main course, possibly seasoned with a drizzle of extra virgin olive oil.
  4. Season with salt and pepper (if necessary) before serving.
  5. If you prefer, complete with chopped parsley to taste (optional).
