Ingredients:

  • 1 glass of dry white wine
  • 3 tablespoons chopped rosemary
  • 1 clove of minced garlic
  • Black pepper and salt to taste
  • 1 turkey weighing approximately 4 kg
  • Greasing oil
  • 300 g of pitted plums or figs
  • 200 g of thinly sliced ​​bacon
  • Chopped chives for sprinkling

Farofa

  • 3 tablespoons butter
  • 2 cups chopped bacon
  • 1 onion chopped
  • 1 crushed garlic clove
  • 1 cup chopped pitted black plums
  • 3 cups cornmeal flakes
  • Salt to taste
  • 1/4 cup chopped chives

Preparation method:

  1. In a large oval bowl, mix the wine, bay leaf, rosemary, garlic and pepper.
  2. Arrange the turkey and cover with cling film.
  3. Leave to rest in the fridge for 4 hours, turning halfway through cooking.
  4. Remove the turkey from the marinade and place it on a baking tray.
  5. Season with salt, cover with aluminum foil and place in a preheated medium oven for 1 hour.
  6. Remove the paper and cook for 40 minutes.
  7. For the farofa, in a pan over medium heat, heat the butter and add the bacon, onion and garlic.
  8. Stir and fry until golden brown.
  9. Add the plums and mix.
  10. Add the cornmeal and salt and stir until thoroughly heated.
  11. Turn off the heat, add the chives, mix and set aside.
  12. Remove the turkey from the oven and set it aside without letting it cool.
  13. In an oiled pan, wrap the plums with bacon, secure with a toothpick and bake in a preheated medium oven for 20 minutes.
  14. Arrange the turkey on a serving plate, distribute the reserved crumbs around the turkey, decorate with the plum medallions and serve.
