Ingredients for the angel cake dough
– unsalted butter to taste, for greasing (see recipe).
– 150 g of wheat flour, sifted.
– 100 g of icing sugar, sifted, to mix with the flour.
– 8 units of eggs, egg whites only (8 egg whites = 280g)
– 3 teaspoons of lemon (juice)
– 250 g of sifted icing sugar, to be whipped with the egg whites.
– 1 teaspoon of almond essence, or as much as you wish. (or vanilla essence)
Angel Cake Syrup Ingredients
– 1/2 glass of water, filtered.
– 1/2 unit of lemon (juice)
– sugar to taste (optional)
Ingredients for decorating
– 150 g of assorted and washed fresh red fruits or as much as you like.
-powdered sugar to taste (or vanilla sugar)
PREPARATION:
- Set aside the utensils and ingredients to prepare the angel food cake dough. Use a very tall baking tray, with a hole in the centre, at least 8-10 cm high.
- Separate eggs to use at room temperature.
- This recipe requires at least 8 egg whites to obtain a tall cake, measuring 22 cm. For larger quantities, adjust the size of the pan, keeping in mind that the dough must fill the entire pan, since its growth is minimal.
- Preheat the oven to 180°C.
- Melt the butter in a pan and use it to grease only the bottom of the pan, do not grease the sides to prevent it from deflating after cooking.
- Sift together the flour and icing sugar (smaller quantity) into a bowl.
- In another bowl, sift the sugar that will be used for the egg whites (larger quantity) and set it aside.
- Place the egg whites in the bowl and reserve the yolks to use in another recipe.
- Wash, dry and squeeze the lemon for the cake (see quantities in the ingredients).
PREPARATION:
Dough for the angel cake:
- Using a mixer, beat the egg whites until frothy and add the lemon juice.
- When they are very white and fluffy (white as snow), without stopping whisking, add the sugar, little by little, ¼ cup at a time.
- Finally add the almond or vanilla extract.
- Once all the sugar has been incorporated and the meringues are firm, stop whisking.
- Remove the bowl from the mixer and add the sifted flour and sugar, do this in parts and mix gently, from the center outwards, to prevent the cake from losing air.
- Pour the mixture into the greased pan up to the edge and level the surface with a spatula.
- Place in the preheated oven at 180°C and bake for 35-45 minutes or until firm (a meringue crust should form on the surface). The time may vary depending on the oven and the size of the cake.
Angel cake syrup:
- Squeeze the lemon juice into the syrup.
- Combine the water with the lemon juice and sugar (optional) and mix until fully incorporated.
- Book.
Angel Cake:
- When the cake is cooked, turn off the oven and remove it.
- Let it cool a little and, with a knife, peel the cake from the sides and bottom, without removing it from the mold.
- Turn it upside down onto a wire rack and let it cool: this is a trick to make the cake even softer.
Angel cake: decoration and assembly
- Remove the cake from the pan and turn it out.
- Arrange the cake on a serving plate.
- When it is cold, prick it with a fork and sprinkle it with the syrup, adding it little by little. So that the cake has time to absorb it..
FINALIZATION AND ASSEMBLY:
- When serving, sprinkle with icing or vanilla sugar.
- Wash and dry the berries and decorate the cake.
- If desired, sprinkle sugar over fruit again.
