– 2 tablespoons of coconut milk powder
Ingredients TO DECORATE
– gluten-free and lactose-free chocolate to be enjoyed without sugar, chopped or other chocolate of your choice. (or cocoa nibs)
PREPARATION:
- Separate all ingredients and utensils for the recipe.
- With the standard recipe with 2 bananas you get approximately 10 candies of 20 g each (weight once ready). Use very ripe bananas.
- Process the bananas. If you don’t have a food processor, mash the bananas well with a fork in a bowl.
- Add the other recipe ingredients with the bananas and mix or process.
PREPARATION:
Banana Brigadeiro
- Place all the ingredients of the recipe, previously mixed, in a pan.
- Place over low heat and stir continuously.
- Cook, stirring constantly, for 10 minutes or until thickened and comes away from the bottom of the pan – to be sure of doneness, tilt the pan slightly to the side and see if the mixture comes away from the bottom.
- Turn off the heat and transfer it to a plate, let it cool slightly and cover with cling film.
- Let it cool completely and then place it in the refrigerator for 1 hour to firm up.
Banana Brigadeiro – Decoration:
- While the banana brigadeiro is cooling, prepare the chocolate that will be used for decoration.
- Chop the chocolate with the tip of a knife on a cutting board into small pieces, forming a “sprinkle”.
- Place the chopped chocolate in a bowl and set aside.
Banana Brigadeiro – Assembly:
- Open the molds on a plate.
- Wet your palms with water.
- Using a (flat) teaspoon as a measure, take a portion of dough and roll it into a ball – the approximate weight is between 12g and 15g each.
- Dip the ball in finely chopped chocolate until the entire surface is evenly covered.
- Arrange the brigadeiros in the molds.
- Repeat the process until you run out of ingredients.
- Keep refrigerated.
FINALIZATION AND ASSEMBLY:
- Remove the banana brigadeiro(s) from the refrigerator just before consuming them.
- Arrange on a serving plate and arrange the desserts well.
