French marble cake: with vanilla and chocolate dough and a crunchy hazelnut covering, perfect for special occasions

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

WHITE PASTA Ingredients:

– 1/2 teaspoon(s) of vanilla essence

– 65 g of sugar (sifted)

– 15 g unsalted butter (melted)

– 2 units of eggs and 1/2 (yolks only)

– 35 g fresh cream (or canned cream)

– 50 g of soft wheat flour (sifted)

– 1.5 g of chemical baking powder

– salt to taste (pinch)

CHOCOLATE DOUGH Ingredients:

– 35 g semi-sweet chocolate (melted)

– 55 g of sugar (sifted)

– 15 g unsalted butter (melted)

– 2 units of eggs (yolks only)

– 1/2 teaspoon(s) of vanilla essence

– 30 g fresh cream (or canned cream)

– 45 g of soft wheat flour (sifted)

– 1.5 g of chemical baking powder

– salt to taste (pinch)

Ingredients for the crunchy hazelnut topping:

– 100 g milk chocolate (melted)

– 30 g of hazelnuts (without skin, chopped and toasted)

– 2/3 tablespoon(s) of oil

Ingredients FOR GREATING:

– unsalted butter to taste

PREPARATION:

  1. Separate all utensils and recipe ingredients. The hazelnuts can be replaced with other dried fruit of your choice.
  2. Grease an 18X10 cm high baking pan with butter and sprinkle it with wheat flour for 1 entire recipe, 04 portions.
  3. Toast the hazelnuts:
  4. Place the hazelnuts in a mold and place in a preheated oven at 180°C for 5-10 minutes.
  5. Rub them with a clean cloth to remove the peel.
  6. Chop or blend in food processor on short pulses to get smaller pieces.
  7. Preheat the oven to 180°C.
  8. Melt the butter for both doughs in the microwave and set aside.

PREPARATION:

White Paste (Vanilla):

  1. In a bowl, beat the egg yolks with the sugar and vanilla essence using a wire whisk, until a light cream forms.
  2. Add the melted butter and mix well.
  3. Add the cream and beat until smooth.
  4. Add the flour, yeast and salt, mixing until you obtain a homogeneous mixture. Book.

Chocolate dough:

  1. Melt the chocolate in a non-metallic bowl in the microwave, on medium power, every 30 seconds.
  2. In another bowl, beat the egg yolks with the sugar until you obtain a creamy mixture.
  3. Add the melted butter and mix well.
  4. Add the cream and beat until smooth.
  5. Mix the melted chocolate, followed by the flour, baking powder and salt, until you obtain a smooth mixture. Book.

French Marble Cake – Assembly and Cooking:

  1. In the prepared pan, alternate portions of white dough and chocolate dough.
  2. Use a barbecue toothpick to make gentle movements to create the marbled effect.
  3. Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  4. Remove from the oven and let the cake cool.

Crunchy Hazelnut Topping:

  1. Melt the milk chocolate in the microwave and mix it with the chopped hazelnuts and oil until you obtain a smooth syrup.
  2. Make sure the cake is completely cool before applying the icing.
  3. Unmold the now cold cake and place it on a wire rack supported by a rectangular baking tray.
  4. Spread the syrup over the cake, covering the top and sides.
  5. Allow to cool completely for the topping to solidify.

FINALIZATION AND ASSEMBLY:

  1. Serve the French style marble cake with crunchy flaked hazelnut topping.
  2. Optional: decorate with chocolate chips or more chopped hazelnuts.
  3. Store in the refrigerator for best preservation, removing some before serving.
