Practical options for welcoming friends and family home for the New Year holidays!
It’s time to celebrate New Year 2024 and the arrival of 2025 with friends and family. And there’s nothing better than offering delicious snacks, right? Galbani prepared for Malu prepared three recipes that combine creativity and tradition.
Among the options there are an artisanal red wine jelly to accompany the parmesan, a pumpkin and coconut dessert served with ricotta cream and crunchy parmesan biscuits, perfect for setting the table and satisfying all palates. Get ready to get all the compliments!
Parmesan with red wine jelly
Ingredients:
- 750 ml red wine
- 1 cup (tea) demerara sugar
- 1 cup seedless grapes or blackberries
- 1 lemon (juice and zest)
- 1 tablespoon unsalted butter
Preparation method:
In a large pan, add the red wine and grapes and cook over medium heat for 20 minutes to reduce the wine. Then lower the heat and add the sugar, lemon juice and butter. Mix well for about 5 minutes. The jelly will be ready when it starts to come away from the bottom of the pan. Transfer to a glass container and refrigerate for at least 4 hours. Serve with parmesan.
Ricotta with pumpkin and coconut jam

Ingredients:
- 500 g of pumpkin
- 250 g of cane sugar
- 2 cinnamon sticks
- 100g grated coconut
- 1 tablespoon unsalted butter
- 3 tablespoons of water
Preparation method:
Place the butter and the peeled pumpkin into pieces in a pan and leave to brown. Then add the sugar and mix. If necessary, add water little by little to prevent it from sticking. Add the cinnamon and continue mixing. Immediately afterwards, when the mixture is at the desired point, add the grated coconut and it is ready. Serve immediately with ricotta cream.
Parmesan Biscuit

Ingredients:
- 2 cups (tea) of wheat flour
- 4 tablespoons butter
- 1 tablespoon oregano
- 150 g of parmesan
- Salt to taste
- Pepper to taste
- 500 ml of soya oil
- 1/2 cup very cold water
Preparation method:
In a bowl add the wheat flour, oregano, salt, parmesan, salt and pepper. Mix everything together, then add the butter and squeeze it with your fingers until it resembles coarse sand. Gradually add the ice water and mix until a firm dough forms but does not break. Cover with cling film and let rest for about 15 minutes.
Place the dough between 2 sheets of baking paper and, on a flat surface, roll out the dough with the help of a rolling pin. Cut with a round cutter about 5cm in diameter. Then, finally, in a medium pan, add the soybean oil and heat it over medium heat to 180ºC or add a match to the still cold oil and, when it lights up, the oil will be ready. Add the cut pasta little by little and fry until golden brown on both sides. Drain on absorbent paper, leave to cool completely and serve.
