Airfryer Red Cabbage Ingredients:
– 1 unit of red cabbage, cut into strips
– olive oil to taste
– salt to taste
– pepper to taste THE
Sweet and sour sauce ingredients:
– 6 tablespoons of olive oil
– 2 tablespoons of balsamic vinegar THE
– 1 spoon(s) of honey or adjust it to your taste
Ingredients TO COMPLETE:
– parsley to taste or chopped green onion (optional)
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- If you’re using fresh herbs to finish for a touch of freshness, wash and dry the parsley or spring onions and set them aside on absorbent paper.
- Cut the red cabbage in half, remove the central core and the hardest parts and cut it into 1.5 cm strips. Important: Make sure the strips are the same width so they cook evenly.
- Place the sliced cabbage in a colander, rinse it under running water and drain.
- Dry the cabbage well – use a vegetable juicer (optional) or let it drain naturally.
PREPARATION:
Red cabbage in the Airfryer:
- Dry the drained red cabbage well with absorbent paper.
- Depending on the capacity of your equipment, divide the preparation into smaller portions and repeat the following steps if necessary.
- Transfer to the fryer basket, drizzle with olive oil, season with salt and pepper, mix and distribute well.
- Place the basket in the drawer and insert it into the appliance preheated to 170°C.
- Cook for approximately 7 minutes, open the Airfryer and gently stir the cabbage to ensure even cooking.
- Continue cooking until 15 minutes have passed, or until wilted but still crisp, with golden edges and slightly charred.
- The total cooking time of 15 minutes may vary depending on the power of your equipment.
Sweet and sour sauce:
- While the cabbage is cooking, in a bowl, dissolve the honey with the balsamic vinegar.
- Add the olive oil, little by little, whisking to emulsify.
- Taste the sauce and adjust the balance of honey and vinegar to your taste.
- Season with salt.
Red cabbage with sweet and sour sauce in the Airfryer:
- Once the cabbage is roasted, remove it from the Airfryer.
- Arrange on a plate or bowl, pour over the sauce and mix well.
FINALIZATION AND ASSEMBLY:
- Serve red cabbage with sweet and sour sauce prepared in the Airfryer hot, cold or at room temperature as an accompaniment to your main course.
- Decorate with parsley or green onions (optional).
