Fresh vegetable salad with shrimp, with homemade hard-boiled egg mayonnaise and drizzled with lemon

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Vegetable ingredients:
– 6 medium potatoes, cut into cubes
– 1 1/2 small carrot(s), diced
– 150 g of Dutch green beans cut into pieces of about 2 cm (or fresh green beans)
– 3/4 leek(s) cut into thin rings
– salt to taste
Homemade mayonnaise with boiled eggs Ingredients:
– 9 piece(s) hard boiled eggs
– vinegar to taste for cooking eggs THE
– 1 and 1/2 teaspoons of Dijon mustard ab
– 3 tablespoons of lemon (or lime) juice
– 2 cups olive oil (or oil)
– salt to taste
– pepper to taste THE
– Sicilian lemon to taste (zest)
– chopped parsley to taste
Shrimp ingredients:
– 600 g of cleaned medium prawns
– 3/4 unit of lemon (juice)
– salt to taste
– pepper to taste THE
– olive oil to taste
Ingredients TO ACCOMPANY (OPTIONAL):
– seasoned green leaves (optional)
PREPARATION:
- Start by cooking the eggs (see preparation).
- Set aside all utensils and ingredients for the recipe.
- Clean the prawns and store them in the refrigerator.
- Peel the potatoes and cut them into medium cubes.
- Peel the carrot(s) and cut into cubes
- Wash the wafer, if necessary, remove the side cords and cut it into pieces of approximately 2 cm.
- Wash and dry the lemon, remove the zest and set it aside on absorbent paper.
- Wash the leek stem(s) and let them dry and then cut them into slices during assembly.
PREPARATION:
Eggs – Cooking (perform this step during pre-preparation):
- Place the eggs in a pan and cover them with water.
- Add a little vinegar to the water.
- Place on high heat and when it boils, reduce the heat to medium and cook for 10 minutes.
- While the eggs are cooking, follow the pre-preparation procedure (step 2).
Boiled eggs – continued:
- Remove from heat, drain hot water.
- Cover the eggs with ice water to speed cooling and set aside.
Vegetables – Cooking:
- In a pan of salted water, cook the potatoes and carrots until tender but firm (about 8-10 minutes).
- Drain and leave to cool.
- In another pan, cook the green beans in boiling water for 2-3 minutes.
- Drain and cool in ice water to maintain color.
- Allow the vegetables to dry completely before adding them to the mayonnaise to avoid excess moisture. If necessary, gently dry the vegetables with a clean cloth or paper towels.
Homemade boiled egg mayonnaise:
- Shell the eggs and, on a cutting board, chop them coarsely.
- Place in the blender glass and add the mustard, lemon juice and half the amount of olive oil or oil and blend until smooth – stop and scrape the sides of the glass as many times as necessary so that all the ingredients are well blended mixed.
- Gradually add the rest of the olive oil or oil in a drizzle, whisking continuously until it emulsifies and a creamy mayonnaise forms: the amount of olive oil or oil may change depending on the size of the eggs used.
- Season with salt and pepper.
- Add the lemon zest and chopped parsley – reserve some zest and parsley for finishing.
- If necessary, pass the mayonnaise through a sieve to ensure a smoother consistency.
- If the mayonnaise thickens, add a few drops of ice water and beat again.
- Store in the refrigerator until ready to use.
Cameroon:
- Preheat a non-stick pan for a few minutes over medium/high heat and grease it with a drizzle of olive oil.
- Dry the prawns with paper towels to avoid excess liquid in the pan.
- Brown the prawns, in small portions, avoiding overcrowding the pan, until they are golden and cooked (about 2 minutes per side).
- Season with salt and pepper and squeeze the lemon juice directly onto them, mixing well.
- Remove and let cool.
Shrimp mayonnaise:
- On a cutting board, slice the leek into very thin rings.
- In a bowl, mix the cooked vegetables, garlic and prawns (reserve some prawns for decoration).
- Gently fold in the homemade hard-boiled egg mayonnaise, covering all ingredients evenly.
- If necessary, add salt and pepper.
- Refrigerate for at least 1 hour to fully incorporate the flavors. For best results, leave for 2 hours if possible.
FINALIZATION AND ASSEMBLY:
- Remove from the refrigerator about 10 minutes before serving to balance the temperature and enhance the flavors.
- Serve to mayonnaise salad on a plate decorated with Cameroon reserved, chopped parsley and lemon zest.
- Follow the shrimp mayonnaise with a dressed green leaf salad (optional).
