A delicious lentil salad with roasted squash and cauliflower and a very tasty tahini dressing.
Recipe for 6 people.

Ingredients Roasted Vegetables
– 6 tablespoons of extra virgin olive oil
– 1 1/2 teaspoon(s) cumin D
– 1 1/2 teaspoon(s) of turmeric D
– salt to taste
– pepper to taste D
– 900 g of cabotiá pumpkin, cut into cubes
– 600 g of fresh cauliflower, divided into florets
Ingredients Lentils
– 1 1/2 cups lentils (or pink lentils)

– 6 cups of water
– 6 bay leaves
– salt to taste
Ingredients: kale and radicchio
– 18 kale leaves, stemmed, cut into strips (or kale)
– 1 bunch(s) of radicchio cut into strips
Tahini sauce ingredients
– 9 tablespoons of tahini
– 9 tablespoons of boiling water
– 3 tablespoons of balsamic vinegar D
– 3/4 teaspoon(s) of garlic powder D
– 3 tablespoons nutritional yeast (optional)
– 3 tablespoons of miso D
– salt to taste
– pepper to taste D
Finishing ingredients
– extra virgin olive oil to taste
– sunflower seeds to taste (or chia seeds) From
PREPARATION:
1. Preheat the oven to 200°C.
2. Clean the cabbage leaves, remove the central stem and place them in a bowl with a sodium hypochlorite solution.
3. Clean the radicchio leaves and place them in the bowl together with the kale leaves.
4. Clean the pumpkin and cut it into half-moons about 1.5 cm wide, cut it into cubes (the peel will be removed after roasting).
5. Wash the cauliflower, divide it into florets and cut them in half lengthwise.
6. Heat a kettle with some water to boil for the tahini sauce.
PREPARATION:
Roasted Vegetables
1. In a bowl, mix the olive oil with the cumin, turmeric, salt and pepper.
2. Toss the squash cubes and cauliflower florets with the olive oil mixture.
3. Grease one or more non-stick baking trays with a drizzle of olive oil and arrange the pumpkin cubes without stacking them.
4. Place in the preheated oven at 200°C and cook for about 10 minutes.
Lentil:
1. Place the lentils in a colander and wash them well under running water.
2. In a pan, place the lentils with the water (see quantities in the ingredients) and the bay leaves.
3. Place on a high heat and, when it boils, add the salt and lower the heat.
4. Cook for about 15 minutes until the lentils are cooked but not falling apart.
Tahini sauce:
1. In another bowl, mix the tahini paste with the boiling water (see quantity in the ingredients) until smooth.
2. Add the balsamic vinegar, garlic powder, nutritional yeast (optional) and miso and mix again.
3. Check the seasoning and add a little salt and pepper if necessary.
Roasted Vegetables – second phase:
1. After 10 minutes, remove the tray(s) from the oven and arrange the cauliflower florets between the pumpkin crescents.
2. Return to the oven and cook for a further 20 minutes until the vegetables are cooked but crisp.
Lentil:
1. When the lentils are cooked, drain them, remove the bay leaves and spread them on a baking tray to cool.
2. Place in the refrigerator to speed up the cooling process.
Roasted Vegetables:
1. Check that the vegetables are cooked but crunchy.
2. Remove from the oven and spread it onto another baking tray to cool.
3. Place in the refrigerator to speed up the cooling process.
APPETITE OR DESSERT (optional):
If you choose to prepare an appetizer or dessert, take the time to prepare the lentils and vegetables in the time available.
Cabbage and Radicchio:
1. Drain the kale and radicchio leaves from the sodium hypochlorite solution.
2. Wash under running water and dry using a centrifuge or with absorbent paper.
3. Book
Lentil and roasted vegetable salad:
1. Add the lentils to the bowl containing the cut vegetables (cabbage and radicchio).
2. Drizzle with half of the tahini sauce and toss so they are well coated in the sauce.
3. Set aside.
Roasted Vegetables:
1. Remove the skin from the pumpkin cubes.
FINALIZATION AND ASSEMBLY:
1. Arrange the lentils with the cabbage and radicchio on a serving plate or, if you prefer, divide them among the plates.
2. Arrange the roasted vegetables on top, spacing them out.
3. Season the vegetables with a drizzle of olive oil.
4. Spread the remaining tahini sauce over the top.
5. End lentil salad with sunflower or chia seeds.
