Practical and irresistible hiding place of minced meat: the simplest and most delicious recipe for a quick and tasty meal




A little hidden with lots of flavor under a very simple puree.

Recipe for 4 people.

Ingredients: minced meat filling for Escondidinho

– 700 g of minced meat

– olive oil to taste

– 1 unit(s) of chopped onion(s)

– 4 cloves of garlic, chopped

– 2 seedless peppers, chopped

– 2 Cambuci peppers cut into thin strips (optional)

– 1 cup(s) of dry white wine

– 1 can of peeled tomato cubes with juice

– salt to taste

– pepper to taste

Ingredients Mashed Potatoes with Cheese

– 900 g of potatoes, peeled and cut into thick slices

– 8 tablespoons of unsalted butter

– 2 cups of milk

– 160 g of coarsely grated mozzarella

– salt to taste

Sautéed Broccoli Ingredients

– 300 g of frozen broccoli

– 4 cloves of garlic, chopped

– olive oil to taste

– salt to taste

– pepper to taste

Ingredients to assemble

– unsalted butter to taste, to grease the refractory(s).

Finishing ingredients

– 1 tablespoon(s) of breadcrumbs

– 1 tablespoon of grated parmesan

Ingredients to accompany

– grated parmesan to taste

PREPARATION:

1. Separate all ingredients and utensils (including the refractories in which you will assemble the recipe).

2. Start by preparing the puree (see preparation).

3. Wash, mince and cut the other ingredients into pieces.

4. Grate the mozzarella and parmesan (optional), if you haven’t purchased them already grated.

5. Preheat the oven to 250ºC.

6. Remove the broccoli from the freezer. Place a pan with boiling water on the heat to cook the broccoli.

PREPARATION:

Mashed Potatoes with Cheese (Baked Potatoes) (do this step before starting the pre-preparation):

  1. Peel the potatoes and cut them into thick slices. This step is optional, since the potatoes can also be cooked whole, with the skin on, and then juiced.
  2. Add salt to the pan with still cold water, add the potatoes and cook until soft (about 20 minutes). This step can be done in the microwave, piercing the potato skin, and cooking for about 10 minutes, increasing the time if necessary.
  3. Continue pre-preparation.

Minced meat filling for Escondidinho:

  1. In another skillet, over medium-high heat, sauté the onion, garlic, and chili pepper in the olive oil until the onion is translucent.
  2. Add the cambuci pepper (optional) and brown.
  3. Add the minced meat and continue to brown until the liquid that has formed in the pan has reduced.
  4. Pour in the wine and keep over high heat until all the alcohol has evaporated.
  5. Add the tomato cubes with the juice.
  6. Season with salt and pepper.
  7. Lower the heat and cook for about 10 minutes to blend the flavors, leaving the stew moist but without broth.
  8. Book.

Mashed Potatoes with Cheese:

  1. When the potatoes are cooked and very soft, drain them.
  2. While still hot, pass the potatoes through a juicer or fine mesh strainer.
  3. Put it back in the pan, add the butter, beating with the whisk until you obtain a puree without lumps.
  4. Bring the puree to the boil and add the milk, stirring constantly.
  5. Add the mozzarella and, without stopping stirring, cook until the cheese melts (use a wire whisk if you prefer) and the puree no longer sticks to the pan.
  6. If necessary, add a little more milk to make it creamy.
  7. Adjust the salt and set aside in the pan.

Ground Beef Escondidinho (Assembly):

  1. Grease the deep baking dish with butter.
  2. First add the meat stew and arrange.
  3. Cover with the puree, leaving the surface smooth.
  4. In a bowl, mix the breadcrumbs with the grated parmesan and sprinkle with the puree.
  5. Place in the oven to heat and brown. It should have a golden surface (estimated time 5 to 10 minutes, may vary depending on the oven).
  6. In the meantime, prepare the broccoli.

APPETITE OR DESSERT (optional):

If you have chosen to prepare an appetizer or dessert, take advantage of the time spent in the oven to prepare it.

Sautéed Broccoli:

  1. With the boiling water, add the salt and broccoli.
  2. When it comes to the boil again, cook the broccoli for another 2 minutes.
  3. Drain and reserve.
  4. Set the unwashed pan aside to brown the broccoli.
  5. In the same pan in which you cooked the broccoli, sauté the garlic in the olive oil until lightly golden.
  6. Add the broccoli and brown them again.
  7. Season with salt and pepper.

FINALIZATION AND ASSEMBLY:

  1. When the escondidinho is golden, remove it from the oven and bring it to the table in its refractory(s).
  2. Arrange the broccoli on a serving plate and serve separately.
  3. If desired, add a little more grated parmesan to the escondidinho.
