White beans with bacon
Time: 45 minutes (+2 hours soaking)

Ingredients:
- 1 1/2 cups (tea) white beans
- 200 g diced bacon
- 1 diced onion
- 1 clove of minced garlic
- 1 diced carrot
- 1 stalk of celery chopped
- 3 tablespoons of tomato paste
- Salt, black pepper and chopped parsley to taste
Preparation method:
- Leave the beans to soak in water for 2 hours.
- Place the beans in the pressure cooker with the bay leaf, cover with water, cover and cook for 20 minutes from when the pressure starts.
- Turn off, wait for pressure to release naturally and drain.
- In a pan, brown the bacon in its own fat over medium heat, stirring until lightly browned.
- Add the onion, garlic and sauté for 2 minutes.
- Add the carrot, celery, tomato paste and beans.
- Season with salt, pepper and cook for another 5 minutes.
- Transfer to a serving plate, sprinkle with parsley and serve.
